Sanjyot, this is Bengal's iconic vegetable chop/ cutlet dating back to early nineteenth century- also used to be sold along with egg roll outside Writer's building in Kolkata during the British Raj and Kolkata's "coffee houses". This was later sold in Eastern Railways and then rest of Indian railways.
Train journey has somehow stopped but journey down the memory lane....naver! And you started this journey with our fav cutless ( as they used to call it on the train!!!) we as kids used to have lot of fun ordering and eating these, we have a fond memories ❤️ Thank you Sanjyot, love the way you show how to make cooking as cinematic as one can! Instead of mainda you can also use besan, this is how we do for quite long and the cutlet comes out very tasty.
