There was a "beef bone soup" restaurant close to me in Naju and I ate this every week for 10 years. It is so incredibly good! Now I live in Romania, and one weekend a month I make my beef bone broth so I can still enjoy it!

I normally don't add salt for it while I'm cooking it.. and individuals can season it with salt and black pepper after serving it.. but you can also add salt if you want in the cooking process.

I did it yesterday. I used my crockpot and had it on for about twenty-six hours. I used buckwheat noodles too. I haven't tried it yet. I have to get the daikon radish. Thanks so much.
I always see ox bones at my local market and always wondered what people would use them for. They're also very cheap which is great because this recipe looks amazing! I can't wait to try to make it at home, but I don't think I could wait that long to try it. Haha!

I wonder if you could cut some of the time for this broth using the pressure cooker? You probably can cut the time in half. You should try a half batch in your pressure cooker and see if the results are the same!

A pressure cooker will not let you develop the same flavor because in order to have flavor you need reduction. Because in a pressure cooker everything is contained, air isn't allowed to escape and there won't be a reduction.
I would still try it. I make bone broth in it all the time! Just note that you cannot add as much water in it as with a regular pot. But that's ok because you dont have to reduce it after. Don't skip the first couple of steps of soaking and cleaning the bones though. Good luck!
You have a good point.. then.. I see some Koreans are already using pressure cooker to make this soup and they say.. it works.. (especially good for saving time..).. so I want to try it and find out with my pressure cooker too. I still think though.. even it works, it can't beat the result from the original way. thanks for your info.

In my opinion, I think it's basically the same... bones from cow.., so not much differences.. some people say that ox is higher quality than beef.. but for this bone soup.. I think you can use what you can get.. ox bone.. or normal beef bone marrow.. Thanks :) Happy to have you on my channel too.

Hi TK l, Yes, it is time consuming but if you make a big batch and store it in the freezer.. it is worth for the effort. We already enjoyed our second meal with it..and my family want to eat many more times.. lol Good to hear from the Netherlands. :) thanks

Hi Mirian, I can suggest to make a similar food with whole chicken (with bone and skin) .. to make homemade chicken broth... and eat it the same way.. but you don't have to boil the chicken that long like this dish.. What Teo told you is right.. one top of that.. another tip I want to give you is.. you can shred the cooked beef instead of slice it...and season the beef with some hot pepper powder, minced garlic, chopped green onion, soup soy sauce (or soy sauce).. little bit of sesame oil (optional).. even hot pepper oil if you want to it extra spicy.. black pepper.. then put the seasoned beef as a topping..that can make the soup spicy and give flavor to it.. but simple way can be just add hot pepper powder to the soup as Teo said..

For this soup, you don't have to season the broth while you are making it.. individuals can season it with salt and black pepper.. very simple seasoning to keep the own flavor of the broth.. andI highly recommend you to enjoy this soup with well fermented radish kimchi.. :) some people put hot pepper powder to mix with the soup when they eat.. I prefer it plain for mine though.. anyway.. if you add other colorful seasoning.. hehe than obviously you will lose that milky color... ;) thanks for your feedback.

hi Sariah Machado , Oops, yes, it will be difficult for you to make this since you are working. The soaking time and cooling time ... you don't have to be there to watch it..but boiling time, you have to watch it.. so maybe .. before weekend.. like friday `~you can soak the bones in water while you are at work.. then.. Saturday, you can boil it... then.. just let it cool .. I usually.. soak the bone overnight while I'm sleeping.. so when I'm up, it's ready to cook ~~~

It is okay if it's little yellowish... when you boil it.. keep remove the foam or some brown things float on the surface of the broth.. If you boil down enough.. you will still get the good flavor..
Yes, some people use pressure cooker to make ox bone broth too.. You might not get as milky white broth as you cook for a long time..but pressure cooker is a quick way to do it.
Can i use regular angel hair pasta for the noodles? I don't have any thin Korean noodles on hand. Just thick ones for jjajjangmyeon and the clear ones for japchae
It's not the same taste or consistency but I'm sure it would do. It's like asking if the rice has to be Asian sticky rice or basmati. Taste is always a consideration.
some people use japchae noodles for this soup too.. so you can try it too.. and thin angel hair noodles can be used too... Charly had a good point about your question ^^
Sure you can.. just the concept for this recipe is.. since it takes such a long time to prepare and cook this broth.. you may as well, cook big batch of it and freeze it.. so you can enjoy the broth for a good time.. anyway.. yes you can make smaller amount if you want.. :)
Is this supposed to have a hearty beef flavor before adding any seasonings? I ordered it today and it basically tasted like water,i wasnt sure if thats how it is supposed to be or if it was just a bad batch or i needed to add seasonings.
It should have hearty beef flavor as you mentioned..but it definitely needs salt and pepper to season.. and we like to eat it with radish kimchi to give more flavor to it.. because the broth itself is kind of too blend too.. it shouldn't be like water as you ordered though .. thanks
Actually this is 곰국 ^^:; Sorry if I confused ... do you mean beef rib soup ?? called 갈비탕 (galbitang)?? if it's not .. I think. it's basically same thing.. 설렁탕 곰국.. like ox bone broth..
Maybe you meant "YeoBoSeYo (=여보세요)"?? If so... this is an expression you can usually use when you answer your phone.. and say "hello (in English)" to the other person who called you.

At one point I was eating every single thing with Kimchee including sandwiches. 3 meals a day .But now I can' eat any spicy food, not even a little bit. Please tell me how to make White Kimchee. I've bought some from Korean grocery but does no look very appetizing and also missed the aroma. Can't I use some paprika to make it with some red color without the spicy taste? I love both Napa cabbage as well as Daikon. Though I find Daikon have more crunch to it, also I don't need to make such huge amount. I love sour kimchee fried rice the most.For that I need Napa cabbage. I usually buy and keep them in he fridge for a few weeks for i to turn sour before I used it for fried rice.
Aeri- why must we cook this broth in two batches? Can we not just add more water and keep cooking it down and not have to go through the trouble of emptying the pot? Yours truly, Lazy Cook. :)
Because you normally don't have that big pot to have all the water to cook once.. plus..(do you have it?? like two batch worth of water in one pot)..also. it is waseful to throw away the bones after you get the broth out once... I mean.. the second.. third time.. the bones still make good bone broth.. that's why we do it twice.. or even third times..

My soup keeps turning out brown?! The flavor is good but its not like Han Bat SeolReongTang in LA. Have you ever had it turn brown? Maybe I need to clean the blood twice? I got the three types of bones from H-mart. Edit. Also when I put flank or brisket meat at the end, it turns even more brown.
The beef chunks and bones make the broth color brown at the beginning.. yes you need to soak the bones and change the bloody water before cooking them.. the longer you cook... you get milky white color.. Next time, I can suggest to cook the brisket at the beginning or in the middle to cook..in an hour or more, the beef will be tender..then take it out from the broth and continue to cook the bones..Key point is.. you need to cook the bone for a long time to get the white broth..
@@aeriskitchen I have the same problem.. My broth is not milky.. Just a bit brownish :( I have been boiling the bones for more than 5 hours and it's still not turning white. The bones have no meat either so I don't know why it's brown :(

I'm trying to do this process but with Chicken bones and skin instead of beef. Hopefully this turns out tasty I'm afraid to drain the first batch though
With.. chicken.. you don't have to drain the first batch.. you will lose all the flavor from the chicken to cook the next broth. ^^:; Even it is not the same, chicken broth can be delicious too. I didn't add any other ingredients to boil the ox bone soup..but my tip for you to make good chicken broth.. boil the whole chicken (with bone and skin) with some onion (half cut), green onions (whole thing or cut in half), some garlic cloves, black pepper and salt... then you will get delicious chicken broth.
Update! Since chicken bones are not bloody I didn't drain the first batch but I ended up making ramen broth😂 I blended the skin into a fine watery paste and added it back to the boil to make it milky
I know this video is old but if you ever get a dog, please don’t feed it cooked bones! cooked bones break easily and sharp pieces can stab your dogs organs. Raw bones are okay and easier digested.

@@bsfb3ar Word 'lady' doesn't translate well to Korean. Ajumma is shorter and slight derogative version of Ajumoni although not always. Depends on relationship, context, and how the word is said. Neutral word used to call attention 'Jugiyo' can be used instead. Men often use word 'Yimo' (aunt) when at restaurants instead but haven't seen many women do that.
I never hear of "jugiyo" Is his a more polite sense of the word? I was told that "yo" is used for being polite. If that is the case would the actual word will be"jugi" or it can never be use without"yo"? Thanks a whole lot.
@@bsfb3ar 'Jugi' means 'there' and 'Jugiyo' is used to ask someone 'over there' for attention. Similar word is 'Yugi' which means 'here' so 'Yugiyo' means 'over here please', handy when Yimo is not sure who ordered the dish she's holding. Both can be used without 'yo' but would be considered rude. "Where is it?" "Yogi" (here) "Jugi" (there).

I'm sorry to hear that you didn't like it much..I can totally understand, it will be such a disappointment after all that hard work you put in it...and it some point, you are right, the soup is bland.. especially without enough salt and pepper. And that thick bland beef flavor is what we enjoy the most and special part of this soup.. when I was little I hated this but now I love it.. that means.. if somebody is not accustomed to the flavor, it can be a boring flavor. anyway.. eat this with kimchi or radish kimchi.. that makes it taste really good :) You can use the leftover broth for korean soup... ramen... stews... thanks for your opinion

I wonder if you could cut some of the time for this broth using the pressure cooker? You probably can cut the time in half. You should try a half batch in your pressure cooker and see if the results are the same!

A pressure cooker will not let you develop the same flavor because in order to have flavor you need reduction. Because in a pressure cooker everything is contained, air isn't allowed to escape and there won't be a reduction.

I would still try it. I make bone broth in it all the time! Just note that you cannot add as much water in it as with a regular pot. But that's ok because you dont have to reduce it after. Don't skip the first couple of steps of soaking and cleaning the bones though. Good luck!
You have a good point.. then.. I see some Koreans are already using pressure cooker to make this soup and they say.. it works.. (especially good for saving time..).. so I want to try it and find out with my pressure cooker too. I still think though.. even it works, it can't beat the result from the original way. thanks for your info.

In my opinion, I think it's basically the same... bones from cow.., so not much differences.. some people say that ox is higher quality than beef.. but for this bone soup.. I think you can use what you can get.. ox bone.. or normal beef bone marrow.. Thanks :) Happy to have you on my channel too.

Hi Mirian, I can suggest to make a similar food with whole chicken (with bone and skin) .. to make homemade chicken broth... and eat it the same way.. but you don't have to boil the chicken that long like this dish.. you usually just put in korean pepper flakes!! (고추가루) or some sliced 청양고추 (Cheongyang chili peppers)!!

What Teo told you is right.. one top of that.. another tip I want to give you is.. you can shred the cooked beef instead of slice it...and season the beef with some hot pepper powder, minced garlic, chopped green onion, soup soy sauce (or soy sauce).. little bit of sesame oil (optional).. even hot pepper oil if you want to it extra spicy.. black pepper.. then put the seasoned beef as a topping..that can make the soup spicy and give flavor to it.. but simple way can be just add hot pepper powder to the soup as Teo said..

For this soup, you don't have to season the broth while you are making it.. individuals can season it with salt and black pepper.. very simple seasoning to keep the own flavor of the broth.. andI highly recommend you to enjoy this soup with well fermented radish kimchi.. :) some people put hot pepper powder to mix with the soup when they eat.. I prefer it plain for mine though.. anyway.. if you add other colorful seasoning.. hehe than obviously you will lose that milky color... ;) thanks for your feedback.

hi Sariah Machado , Oops, yes, it will be difficult for you to make this since you are working. The soaking time and cooling time ... you don't have to be there to watch it..but boiling time, you have to watch it.. so maybe .. before weekend.. like friday `~you can soak the bones in water while you are at work.. then.. Saturday, you can boil it... then.. just let it cool .. I usually.. soak the bone overnight while I'm sleeping.. so when I'm up, it's ready to cook ~~~

It is okay if it's little yellowish... when you boil it.. keep remove the foam or some brown things float on the surface of the broth.. If you boil down enough.. you will still get the good flavor..

Yes, some people use pressure cooker to make ox bone broth too.. You might not get as milky white broth as you cook for a long time..but pressure cooker is a quick way to do it.
Can i use regular angel hair pasta for the noodles? I don't have any thin Korean noodles on hand. Just thick ones for jjajjangmyeon and the clear ones for japchae
It's not the same taste or consistency but I'm sure it would do. It's like asking if the rice has to be Asian sticky rice or basmati. Taste is always a consideration.
some people use japchae noodles for this soup too.. so you can try it too.. and thin angel hair noodles can be used too... Charly had a good point about your question ^^

Sure you can.. just the concept for this recipe is.. since it takes such a long time to prepare and cook this broth.. you may as well, cook big batch of it and freeze it.. so you can enjoy the broth for a good time.. anyway.. yes you can make smaller amount if you want.. :)

Is this supposed to have a hearty beef flavor before adding any seasonings? I ordered it today and it basically tasted like water,i wasnt sure if thats how it is supposed to be or if it was just a bad batch or i needed to add seasonings.
It should have hearty beef flavor as you mentioned..but it definitely needs salt and pepper to season.. and we like to eat it with radish kimchi to give more flavor to it.. because the broth itself is kind of too blend too.. it shouldn't be like water as you ordered though .. thanks

At one point I was eating every single thing with Kimchee including sandwiches. 3 meals a day .But now I can' eat any spicy food, not even a little bit. Please tell me how to make White Kimchee. I've bought some from Korean grocery but does no look very appetizing and also missed the aroma. Can't I use some paprika to make it with some red color without the spicy taste? I love both Napa cabbage as well as Daikon. Though I find Daikon have more crunch to it, also I don't need to make such huge amount.
I love sour kimchee fried rice the most.For that I need Napa cabbage. I usually buy and keep them in he fridge for a few weeks for i to turn sour before I used it for fried rice.

Aeri- why must we cook this broth in two batches? Can we not just add more water and keep cooking it down and not have to go through the trouble of emptying the pot? Yours truly, Lazy Cook. :)
Because you normally don't have that big pot to have all the water to cook once.. plus..(do you have it?? like two batch worth of water in one pot)..also. it is waseful to throw away the bones after you get the broth out once... I mean.. the second.. third time.. the bones still make good bone broth.. that's why we do it twice.. or even third times..

My soup keeps turning out brown?! The flavor is good but its not like Han Bat SeolReongTang in LA. Have you ever had it turn brown? Maybe I need to clean the blood twice? I got the three types of bones from H-mart.
Edit. Also when I put flank or brisket meat at the end, it turns even more brown.
The beef chunks and bones make the broth color brown at the beginning.. yes you need to soak the bones and change the bloody water before cooking them.. the longer you cook... you get milky white color.. Next time, I can suggest to cook the brisket at the beginning or in the middle to cook..in an hour or more, the beef will be tender..then take it out from the broth and continue to cook the bones..Key point is.. you need to cook the bone for a long time to get the white broth..
@@aeriskitchen I have the same problem.. My broth is not milky.. Just a bit brownish :( I have been boiling the bones for more than 5 hours and it's still not turning white. The bones have no meat either so I don't know why it's brown :(

I'm trying to do this process but with Chicken bones and skin instead of beef. Hopefully this turns out tasty I'm afraid to drain the first batch though
With.. chicken.. you don't have to drain the first batch.. you will lose all the flavor from the chicken to cook the next broth. ^^:; Even it is not the same, chicken broth can be delicious too. I didn't add any other ingredients to boil the ox bone soup..but my tip for you to make good chicken broth.. boil the whole chicken (with bone and skin) with some onion (half cut), green onions (whole thing or cut in half), some garlic cloves, black pepper and salt... then you will get delicious chicken broth.
Update! Since chicken bones are not bloody I didn't drain the first batch but I ended up making ramen broth😂 I blended the skin into a fine watery paste and added it back to the boil to make it milky
I know this video is old but if you ever get a dog, please don’t feed it cooked bones! cooked bones break easily and sharp pieces can stab your dogs organs. Raw bones are okay and easier digested.

@@bsfb3ar Word 'lady' doesn't translate well to Korean. Ajumma is shorter and slight derogative version of Ajumoni although not always. Depends on relationship, context, and how the word is said. Neutral word used to call attention 'Jugiyo' can be used instead. Men often use word 'Yimo' (aunt) when at restaurants instead but haven't seen many women do that.
I never hear of "jugiyo" Is his a more polite sense of the word? I was told that "yo" is used for being polite. If that is the case would the actual word will be"jugi" or it can never be use without"yo"? Thanks a whole lot.

Similar word is 'Yugi' which means 'here' so 'Yugiyo' means 'over here please', handy when Yimo is not sure who ordered the dish she's holding. Both can be used without 'yo' but would be considered rude. "Where is it?" "Yogi" (here) "Jugi" (there).

I'm sorry to hear that you didn't like it much..I can totally understand, it will be such a disappointment after all that hard work you put in it...and it some point, you are right, the soup is bland.. especially without enough salt and pepper. And that thick bland beef flavor is what we enjoy the most and special part of this soup.. when I was little I hated this but now I love it.. that means.. if somebody is not accustomed to the flavor, it can be a boring flavor. anyway.. eat this with kimchi or radish kimchi.. that makes it taste really good :) You can use the leftover broth for korean soup... ramen... stews... thanks for your opinion
