    Learn how to make traditional Afghan dumplings, Ashak, with a delicious leek filling, served with creamy garlic yogurt sauce, kidney bean sauce, and a garlic mint garnish. This vegetarian Afghan recipe is perfect for a hearty meal full of flavor and cultural heritage.
    Ingredients
    For the Dough:
    • 2 cups all-purpose flour
    • 1 egg
    • 1 tbsp salt
    • Cold water
    For the Filling:
    • 2 branches of leek (chives)
    • Salt
    • Pepper
    • Coriander seeds (ground)
    • Chili flakes
    • A bit of oil
    For the Sauce:
    • 1 cup kidney beans
    • 1 onion
    • Tomato purée
    • Salt
    • Pepper
    For the Yogurt Sauce:
    • Greek yogurt
    • Salt
    • 2 cloves garlic (crushed)
    For Frying and Garnish:
    • 6 cloves garlic (for frying)
    • Oil (as needed)
    • Dry mint
    • Chili flakes
    Instructions
    1. Prepare the Dough:
    Mix the flour, egg, and salt, then gradually add cold water to form a medium-soft dough. Cover and let it rest for 30 minutes.
    2. Prepare the Filling:
    Wash and finely chop the chives. Add salt, pepper, ground coriander seeds, chili flakes, and a bit of oil. Mix well, rubbing the ingredients together.
    3. Roll Out the Dough:
    Flatten the dough using a machine or by hand. Alternatively, you can use ready-made dumpling wrappers if available. Cut the dough into circles. Place a small amount of filling in the center of each circle. Use water to moisten the edges of the dough to stick them together and seal tightly.
    4. Make the Sauce:
    Sauté finely chopped onion in oil until translucent. Add tomato purée, salt, and kidney beans. Cook until the sauce thickens slightly.
    5. Prepare the Yogurt Sauce:
    Mix Greek yogurt with salt and crushed garlic.
    6. Fry the Garlic:
    In a separate pan, fry the garlic cloves in oil until lightly golden. Be careful not to over-fry, as it can affect the flavor.
    7. Cook the Dumplings:
    Bring a large pot of water to a boil. Add the dumplings and cook for 3-5 minutes or until done. Drain them well.
    8. Assemble and Garnish:
    On a serving dish, start with a layer of yogurt sauce, followed by the dumplings. Add another layer of yogurt, then the kidney bean sauce. Garnish with fried garlic, dry mint, and chili flakes.

    Note: if you’re not able to find chives in your local supermarket you can substitute them with green part of leeks.
