I am in AZ and a huge fan, my brother lives in South Texas. He recently visited the Dallas area and then came home to visit AZ for Thanksgiving. He brought me the Meat Church Fab 5 seasoning package. Wow!! Love the Blanco. Thanks Matt, keep smoking!.
I have a crown roast in the freezer now that I will be pulling out soon. I'm glad you put this one in the rotation, it looks delicious. Your channel should be over a million with all the great cooks you do
Thank you!! I ordered one for the 1st time because my Mom wants it for Christmas. I have to cook it though and never have. I've only eaten them years ago when I wasn't old enough to cook. 😊 I'm so worried about messing it up because I'm 52 years old and my Mom is the only person in the world I'm afraid of. 👀 I love her a lot too.
Also, I did the double smoked ham and the turkey recipes for thanksgiving, came out amazing man! Appreciate what you do, you’ve made me want to start doing this all the time and hopefully be able to someday!
Got my order in with Hudson Oaks HEB butcher for a crown roast pick up on Mon. Got all the ingredients and will be serving on Christmas eve. Thanks BTW for your Spatchcock Turkey recipe. It was a HUGE hit this Thanksgiving. That says a lot since we were all turkeyed out over the years even after frying in previous years. Merry Christmas Matt to you and yours.
That's what I admire and respect about you, Matt. The product is always fresh. If the retailers don't like it, no biggie. I'll just get it directly from you and will gladly wait for it to arrive. Also, props to whomever handles the website. It has always been easy to search and find what I'm looking for. Happy Holidays!
I make a sourdough sage stuffing with Jimmy Dean sage sausage in it and a good amount of fresh sage. So good. You can literally serve it with any protein and be really not mad about it.
Thank you Matt for making this. I have picked up a couple of these roasts at Costco, pretty cheap, (in the $30's). They also may call it a rack of pork. I talked to their butcher, and he said they always have it around Thanksgiving and Christmas. I couldn't wait the first time I heard about it, and ordered one from Heberts Specialty Meats (The Woodlands, TX) but it was more expensive that time. I plan to pick up a couple more before the holidays are over with. I love this recipe, and really want to check out the stuffing recipe too. Thanks again, wishing you a Merry Christmas, and keep up the great work!
Excellent video, I haven’t even considered cooking that for holidays. Great recommendation, great cook. I picturing a 6 to 12 brine. Definitely couldn’t hurt. Thanks Matt for all the inspiration this year. Happy Holidays sir!
I need to see if I can find one of those and give that a shot! Thanks for posting. I typically do a pork loin when I’m feeding a few people, but this would make a great option!
Love your channel Matt!! , love your connection with your followers!!! I’m gonna get me a Meat Church hoodie!! My Christmas gift to myself!!💪🏻🤩😎 Go Redskins!!!
Holy smokes, $56 for 9 lbs is wild. I just bought one earlier today for $11.50 that is 6 lbs. I just need to add the chop cuts to make it into a crown. It came pre-frenched.
i hate watching your videos after breakfast because i have to eat lunch early love that crown haven’t seen one in meat markets in a long time your the best
Looks as pretty as it is tasty! Actually ordered some Big Wicks before the video was over. You know they will see a surge in sales after this video and for good reason. Thanks as always Matt for something I probably would not have done on my own without you making it look easy!
What a fantastic idea of including the drink mix in your video, I absolutely love this idea Also the glove police are going to have a heyday with this 😆😆
@ we are going with ham for Christmas, but I’m gonna cook this before next Christmas and and try to perfect it for next Christmas! I will definitely let you know!
That looks fantastic!! I have never seen a roast like that before and will DEFINITELY be bugging my butcher before judgment dinner.. I mean, Christmas.... stupid autocorrect😂
Outstanding recipe, and loved the bourbon cocktail ... the stuffing recipe I will definitely try. Question, we host Christmas Eve and Christmas day events for family ... the last two years we have tried to mix up the menu, last year we did appetizers instead of a main course and found that folks really liked it, and ended up interacting more as they kept coming back to the appetizers on the island in the kitchen... any appetizer recipes or ideas you would recommend?
I’m visiting the PNW right now with my wife. We are bundled up like we are going to Alaska, saw kids in store yesterday in shorts and shirts. It’s 80 in central Texas next 3 days
Matt, did you brine it with the crown roast already all cut and rounded? I'm getting a bone in pork loin from my butcher on the 23rd and want to know if I brine it before I cut it up or after.
This man showing off with the pork crown AND the Weller!! 🤤 That being said, curious as to how much of the Weller you'd be able to taste with all of the cocktail ingredients. I think you should send me some so I find out, you know, for science!! 😂
Christmas Card worthy? Damn straight. I gotta say of the videos you've done, this one was completely bitchin'! I wish I could smell it too. Thank you sir for your great videos.
Once again, I'll find myself driving to the store to bug the butcher with a special request... I don't know if I like any of my friends and family well enough to share the good bourbon with them!😂😂😂
Hey Matt, that cocktail is the bomb. Unfortunately my wife, she is unable to consume alcohol any longer, so I made this as a mocktail for her, it will be a great Christmas breakfast drink. Thanks for all of your content you put up, I try much of what you do! Cheers! 🙌🏼🥃
That looks amazing, Matt. I've seen it cooked before but never with stuffing. Correct me if I'm wrong, but isn't that baby back ribs still attached to the pork loin? Before a butcher separates the two? And as for the drink. For mixing, I would've went with the Buffalo Trace. The Wellers Single Barrel is to drink neat. Lol. Too good for a mixer. I can't find it down here. Me and you have talked about 107 in the past. I need another bottle. And it's difficult to find here in Houston. Well, find one that they aren't charging you 250 to 300 for anyway. I did score a Stagg last week while I was in Bay City. I got it for 130. They been running 250+. This guy just got a case and had two on his shelf. So he sold one on the shelf to me for 130. If you know where I can find Wellers 107 or Single Barrel, I'd appreciate it if you could let me know.
Hey Matt happy holidays! 🍻 🥃 I’d love to make that cocktail but getting a bottle of single barrel in Ohio (thanks OHLQ) is impossible if you feel like gifting a bottle I’d appreciate that 😂
Matt, you've built a great brand with great products. Who's running the customer service desk responding to the support emails? It's probably a weak spot you should take a look at. Good lord I hope it's not you, your wife, etc or I'm probably barking up the wrong 🌲 😂
That first cut is the money shot of the year. Damn.
Be well and I hope you make the most of the holiday season with your family and loved ones.
JT
It will never get any better!!!!!
I am in AZ and a huge fan, my brother lives in South Texas. He recently visited the Dallas area and then came home to visit AZ for Thanksgiving. He brought me the Meat Church Fab 5 seasoning package. Wow!! Love the Blanco. Thanks Matt, keep smoking!.
looks so good

That is awesome. Cheers!
That looks amazing Matt!!!❤❤
I love everything about this video LOL
Glad you did this, most of the youtube food channels I see don't have one on this, it's one I've been wanting to try.
Outstanding! Looks almost too good to cut into. Well done Matt.
Thank you!!!
This looks awesome! Bonus holiday cocktail to boot. I’ll be trying both.
I’ve gotta make one of those, looked fantastic Matt. Great video.
Great job. Really enjoying the inclusion of cocktail ideas too! Keep up the good work!!
Sure looks good!

Looks so amazing!! You are by far my favorite RUclips creator. Love everything you do
I really appreciate that and appreciate you being here!!
Got my order in with Hudson Oaks HEB butcher for a crown roast pick up on Mon. Got all the ingredients and will be serving on Christmas eve. Thanks BTW for your Spatchcock Turkey recipe. Just picked up a bottle of Penelope Architect! Can't wait to try it with this recipe!
Master bartender Matt!! That roast looks amazing and inexpensive meal for a family!! Great video MP!!
Thank you!!!!!!
Great video Matt! That looks absolutely delicious. I’ve done the whole bone in pork roast before and it was amazing!
Thanks for sharing!!!
Thanks for a great video
My pleasure!

Appreciate the feedback! Happy Holidays!!
Yes, Yes, Yes. Picking up all I need tomorrow and using the Brushfire Glaze you introduced me too.
Looks delicious right there
Thank you!!!!!
@ your welcome
Can't tell which looks more delicious, the drink or the roast.
I make a sourdough sage stuffing with Jimmy Dean sage sausage in it and a good amount of fresh sage. So good. You can literally serve it with any protein and be really not mad about it.
That's a dam generous meteorologist with a dam fine taste in whiskey! The crown roast looks fit for a king as well. Great video!
Thank you Matt for making this. I have picked up a couple of these roasts at Costco, pretty cheap, (in the $30's). They also may call it a rack of pork. Another winning looking dish. Hope you have a Merry Christmas and Happy Holidays. Cheers, Matt! 👍👍✌️🎄
Awesome! I've done these a few times for Christmas. Keep up withe the Bourbon cocktails! (Rye OK, too!)
I'm on my second cocktail. This critter is delish
Nice!
Don’t think I could ever be mad at that roast!
Ain't mad at it!
I need to see if I can find one of those and give that a shot! Thanks for posting. I typically do a pork loin when I’m feeding a few people, but this would make a great option!
Cheers 🍻
Cheers!
Ziet er goed uit. Ga ik zeker maken. Je recepten zíjn goud. Groet uit Nederland 🇪🇬
Damn that cocktail sounds so damn good!
Thanks Matt in Tennessee for a few weeks but can’t wait to get home to my smoker and smoke another Pitttman brilliant recipe
LoL, Matt "Bourbon is a hobby of mine"
Hey bro. Me too. "Big hobby of mine"
Love Buffalo Trace.
Crown roast loos fantastic!
Honey hog is the best my wife loves it.

I’m gonna get me a Meat Church hoodie!!
My Christmas gift to myself!!💪🏻🤩😎

Flexing with the Weller single barrel! In a cocktail, Haha! I need some friends to gift me these bottles too.
Better bourbon = Better cocktails. :)
Just placed and order for some Big Wicks based on the recommendation. Happy Holidays
And another must try smoke!
Enjoy!!

I really appreciate you supporting them!
What a fantastic idea of including the drink mix in your video, I absolutely love this idea
Also the glove police are going to have a heyday with this 😆😆
Love it!
Surely I'm not the only one wondering what kept the stuffing from falling out the other side?? Great video, be blessed.
i too was wondering and even went back wondering if i missed something
Sitting on a roasting pan.
Looks fantastic, Matt! My family and I are figuring out what to do for Christmas dinner so I may suggest this! And we do a very similar stuffing!
PERFECT!!! Merry Christmas!
@@MeatChurchBBQ Merry Christmas as well!
🔥
Cheers!
My only concern is I’m saving that Weller for neat or rocks. Use the Trace for the mix!
Looks great.
One of things you see in movies and always wondered what it was. Gonna try this.
Cool. Hope you enjoy!!!
Bro you crushed this! I might make this for Christmas dinner now!
Let me know how it turns out!
@ we are going with ham for Christmas, but I’m gonna cook this before next Christmas and and try to perfect it for next Christmas! I will definitely let you know!
My local grocery store has berkshire pork roasts like this on sale. May need to try this one!
PERFECT!!!
That looks fantastic!! I have never seen a roast like that before and will DEFINITELY be bugging my butcher before judgment dinner.. I mean, Christmas.... stupid autocorrect😂
Did my first smoked turkey this year with one of your recipes… made me the turkey champion over my wife’s turkey!
Will be going by my HEB in North Ft. Worth next week to see if they have these ready! We will have a new HEB soon in Colleyville/Bedford!
Wow! Actually, cutting it that way provided a good reveal. A pilgrimage to Waxahachie may be in order for some supplies.
Can you make a gear video? Everything you use outside of your pits and seasonings (thermometers, pots/pans, gloves, etc.)
Interesting idea!
You should try and do a collab with the bearded butchers. That would be awesome
Could you do a smoked thick cut bone in pork chop video!? Think that would be epic!
"Finally hoodie weather here in Texas"
Those of us in the PNW - 🤣😂🤣
heard that!
I’m visiting the PNW right now with my wife. We are bundled up like we are going to Alaska, saw kids in store yesterday in shorts and shirts. It’s 80 in central Texas next 3 days
I watched the video of you making the stuffing. Was the stuffing already cooked before putting it in the roast?
Your buddy got anymore of those single barrels?… 😯😬. Great vid Matt
I'll have to see what I can do! 😉
Matt, did you brine it with the crown roast already all cut and rounded? I'm getting a bone in pork loin from my butcher on the 23rd and want to know if I brine it before I cut it up or after.
Im not big on a lot of sugar in my cocktails, but daaammnnn that looks good!
Really good. Cheers!
Do you cook the stuffing beforehand? I feel like it will overcook with the roast
Love this recipe! Do you have a cranberry sauce recipe? Looked and could find one. Id love for you to share it if you do!
Orange soda goes great with so many drinks.
Try it with kirschwasser.
Looks great. Can you give some more detail on what the foil covers on the tips of the bone are for and what happens if you don't use them?
I haven't tried this, but I would think its so they don't get black and charred over the long cook
Keep them from getting burned.
Great looking and sounding recipe. Turned out amazing and it looked like he liberally seasoned the cutting board too. Haha
What’s the cocktail called? Looks amazing.

You should test and find out. :)
👀 Is that a new era Meat Church hat???
We sell it Navy. The red was from years ago. www.meatchurch.com/collections/hats/products/meat-church-new-era-navy
Christmas Card worthy? Damn straight. I gotta say of the videos you've done, this one was completely bitchin'! I wish I could smell it too. Thank you sir for your great videos.
🤩
Cheers!
Awesome! When are BBQ classes coming back?
what keeps the stuffing from falling out?
roasting pan.
It'd be great if it was taken from a raw cut to a crown roast ready to cook. Trying to find a crown roast in my area is a bit of a stretch ...
Once again, I'll find myself driving to the store to bug the butcher with a special request... I don't know if I like any of my friends and family well enough to share the good bourbon with them!😂😂😂
Happy Holidays!
@MeatChurchBBQ same to you guys, cheers!
lol - I’m particular as well. I did splurge all to myself & bought, Little Book - The Infinite 2024 & let me tell you, It’s heaven with every sip!!
Love this video, would that red new era your wearing be available for sale?
We sell a navy version right now. www.meatchurch.com/collections/hats/products/meat-church-new-era-navy
Can this be cooked to a higher temp, like a shoulder?
It will dry out.
Hey Matt, that cocktail is the bomb. Unfortunately my wife, she is unable to consume alcohol any longer, so I made this as a mocktail for her, it will be a great Christmas breakfast drink. Thanks for all of your content you put up, I try much of what you do! Cheers! 🙌🏼🥃

Oh man Weller Single Barrel in a cocktail?? Thats such a rare bottle to
Make a mixed drink with. Next time just sip it neat lol Great video tho 🍗🥩🍖🥃
Better bourbon = Better cocktails :)
Matt, you've built a great brand with great products. Who's running the customer service desk responding to the support emails? It's probably a weak spot you should take a look at. Good lord I hope it's not you, your wife, etc or I'm probably barking up the wrong 🌲 😂
Matt, can you pull that off with plain beef ribs?
That would be massive (but interesting).
Hey Matt could you brine beef back ribs or would an injection be better
Not a ton of meat on those, but either would work.
Im curious if that is a single pork loin or double. Looks big enough to be a double.
Gee matt what's the temperature there high 6o's ???? Come to Massachusetts and bring a parka...
too cold for me!
Hey Matt Pittman can you do a video of a Beef Rib Wellington?
ruclips.net/video/UNHxy7HEeMs/видео.html
Up until just now I didn't realize HEB sold your seasonings.. 😂
Covering expensive, fancy, delicious bourbon with all those fruit juices is breaking my heart
Will you be at the Cowboys vs Buccaneers game coming up??
YES!
Awesome! Me and my family will be there!
