Hi Brenda, thank you and that is an excellent question. Cane sugar is less refined than regular sugar and retains traces of molasses. From what I've seen at the grocery store, the two kinds of sugar are labeled as 'pure cane sugar' or 'granulated sugar' which I've been referring to as regular sugar.
That's a great question! Cassava flour is made from the whole cassava root, while tapioca flour is just the starch. Cassava flour has a higher fiber content and a different texture. It’s not recommended to substitute tapioca flour for cassava flour in cookies directly. But you could experiment with adjusting the flour amounts to 2 cups almond flour and 1/4 cup tapioca flour. Maybe try making a half batch and see how they turn out :)
