Authentic Proper Bolognese - How To Make Recipe

  • A Proper Bolognese, with a few tweaks to really make it amazing! Full instructional as always. Please try it, you will love it and will never make a bolognese the old way ever again!
    Ingredients:
    250g Beef Mince (Ground)
    250g Pork Mince (Ground)
    1 Litre Tomato Passata
    1 Tbsp Tomato Puree (Paste)
    2 Carrots (Grated Finely)
    2 Celery stalks (Diced Very Finely)
    1 Large Onion (Diced)
    250ml Red Wine (1 Cup)
    40g Pancetta
    Pinch Oregano
    Pinch Basil
    Salt
    Pepper
    Lots of Water
    200ml Full Fat Milk

    what an amazing recipe!! cant believe theres milk in it!! so the question is,, can I make ahead and freeze it? - with the milk in it? - i live near london :)

      and also,,, can i use the pressure cooker to save the 4 hour cooking?

      You can definitely freeze it, no problem!!
      You can also use a pressure cooker for sure, I'm not sure how long for though, as I do not use one anymore, haven't for many years. I don't like them, I can always taste something metallic in my food whenever anything is cooked under pressure. Also, I believe a quality is lost with a pressure cooker, it's like the slow cooking really brings something out in the food, that pressure cooking doesn't have. Even with really tough meats, like shin, I would prefer to stew it for 24 hours rather than pressure cook it for a few hours, it just tastes different.

      Proper Bolognese has no herbs, but an Italian chef I know uses a little basil AND oregano. Took me by surprise too! Anyway, I tried it, just a pinch as too much can bitter your food, and hey it works for me Thanks for your comment!
