for CPU heat simulation, we should enter heat power as input, like your video, right?
yes the heat produced by CPU or CPU Chip will be treated as input heat power

Why is the convection coefficient 27 W/m^2K? And how do you estimate it?
because of the air. The air convection coefficient is between 10-100
