Well, normally you wouldn't put bulghur into the lavash wrap. Just the meat itself in lavash is perfectly fine. If you want, you can also complement the meat with just a little bit of onions with sumac and some parsley. If you also think of adding some tomato and pepper in there, just order a kebab wrap instead. In general, you should buy simit from bakeries, not from the street vendors. Simit is only good when it's fresh and you are much more likely to find a fresh simit in a bakery. There, you can also find the other, softer "bakery style simit" in addition to the "street style simit".
