Baked Lemon Custard Donuts - Less Oil!

- The fluffy no-fried donuts, paired with smooth lemon custard filling, are both pleasing and refreshing!
✤ Dough Ingredients for 12
All Purpose Flour(or Bread Flour) 350g
Salt 5g(1tsp)
Caster Sugar 45g
Instant Yeast 5g(1/2tbsp)
Egg 55g
Milk 170g (May add or remove about 15g)
Melted Unsalted Butter 45g
✤ Custard Sauce
Whole Egg 1pc
Egg Yolks 2
Milk 130ml(135g)
Caster Sugar 35g
Corn Starch 26g
Cream Cheese 120g
Milk 150ml(155g)
Sugar 25g
Lemon juice 23g
Lemon zest 1 whole lemon
*Preheat the oven to 375°F/190°C 30 minutes in advance, and bake the middle layer rack for about 12 minutes until the surface is golden brown
💕tips
1. Adjust the amount of milk according to the water absorption of the flour. Different flour brands or seasons will affect the amount of milk. The final mixed dough should be very soft, a bit sticky to the bottom of the basin and you hands, but the dough is a ball. When you spend about 7 minutes kneading the dough until the surface of the dough is smooth, soft and elastic, the dough will no longer stick to your hands.
2. Cream cheese should be softened in advance, which can shorten the melting time. Do not boil the cheese and milk when melting the cheese to prevent excessive evaporation of water, and control the temperature to about 60-65°C. - Хобби

If you do windowpane test, around 80% thick membrane is enough for donuts dough. The baked donuts will have almost same texture as the one sold in bakery stores.

Instead of cornstarch, you can use cake flour for the lemon custard.

I bought it from local grocery store many years ago. Any wooden pin should be ok, soak your rolling pin with oil several times if it is new. Your pin will be "non-stick" after this process.
