Once you set the valve set point you need to roll into the throttle and the HP and torque will rise. If the mph raises too quickly you need to raise the value set point more until the truck slowly accelerates. You will not get max HP to torque running the truck at a steady speed.
Did you guys go back and calibrate the second load cell with the rod and weights? You may have to unbolt the bracket and install it on the second retarder to do so. If you hadn't done so, that's proba ly why your tq and hp is reading so far off. I've used a number of different dynos, but not one like that. Once it's sorted and it's working correctly, I'm GUESSING you'd bring it up to high idle/governed RPM limit in a high gear, 12th like you said and apply a load, seems like around 55% worked in this instance, so that it slowly pulls it down through the entire RPM band. Your dyno should graph this and give you something that looks like a dyno graph you're familiar with. It will take some experimenting with the load percentage. Not enough and it won't pull the RPM down all the way. Too much will pull it down and try to stall it too quick. You'd want a nice smooth ramp down. Or ideally if the dyno can do it, setup automated ramp runs where it does it all for you, be that ramp up or ramp down.

Horsepower is just a mathematical equation based on torque, a dyno does not measure horsepower it measures torque and horsepower is an equation. Dyno numbers are meaningless since every dyno measures torque differently and it also depends on how the operator loads the dyno. The main purpose of a dyno is to verify the changes you are making are having a positive change.

At some point id love to see a drag semi with an automatic and an 8v92t just to see if it the new gen automatics are worth it if it breaks modify it till its good enough

you need to chain that truck down better. If you get any kinda wiggle or misalignment in the drive axles it's gonna jump right off that thing.

Dyno at Pittsburgh Power has a "anchor" that pins onto the fifth wheel in case of dyno failure.
Attending a course on how to run it might be good, have someone come out and teach you how to run it and get all the correct values.
