    These are a complete game changer, so good, so thin yet so sturdy for tacos, I made them tonight and was blown away! Thank You Annie! P.S. Cut a 1 gallon size plastic freezer bag down the sides ( so it opens like a book) use this instead of parchment paper in your tortilla press, easy to peel off , and reusable over and over for each tortilla!

      Have you tried to freeze them? Do you know if they would freeze well, and, if so, would you put parchment between the tortillas?

      Wax paper is also an option over parchment paper or the gallon bag / plastic wrap recommendation above

    I suggest lupina lupin flour, I bought Anthony's bc I was having trouble finding lupina, Anthony's is extremely bitter and with my husband it affected his blood sugar. Apparently it has to do with how Anthony's processes their flour. Lupina is a lighter yellow and milder flavor no bitterness

      Some people are sensitive to legumes and so lupin Flour not good for everyone. ❤

      Does you husband start to eat protein first? Eating protein first decreases blood glucose reaction when carbs are eaten second.

    I use a round pizza pan to press mine. I place it over my dough ball (using parchment paper on both sides of course) and press down on both sides of the pan with even pressure and was surprised how perfect they turned out 😊

    In Switzerland we have different lupin flowers. For this recipe it would be important to use sweet lupin flour. Other lupins can't be eaten raw and I'd be afraid the dough is not heated up enough

    If you are allergic to soy, almonds or peanuts chances are you allergic to lupin. I had to check with my physician and suggest anyone thinking of using it do the same.

    I made these tortillas today. I had all of the ingredients, including a tortilla press. I decided to divide the dough into 4 to make 6-inch tortillas. That is exactly what I got: 4 tortillas and the tortillas look exactly like the ones shown in the video. I added a tablespoon of nutritional yeast to increase the "umami". I am very happy with the result. The next time I make these I am going to test the recipe by decreasing the xanthan gum to 2 teaspoons.

      I also felt like it was a bit heavy on the xanthan gum. I’m going to swap it out with beef gelatin and see if that works. Nutritional yeast is a nice idea. I was thinking about using corn extract.

      i reduced xanthin gum to 1/4 teaspoon and found the tortilla made to be acceptable with reduced flexibility, but still bendable.

    I just made this!!! I have been craving nachos but have not found a good keto recipe until today!!! I made the tortillas in a skillet and then decided to cut them in triangles and fried them. Then turned out amazing!! Very crispy, similar to when you fry a corn tortilla. I also fried them without precooking the tortilla and they fried really well. They did not turn out as crispy but were still delicious. They turned out more like empanada texture, so I decided to make a cheese empanada, and guess what… they worked… turned out pretty good!!! This is my new go to tortilla recipe!

    I used soy flour because I didn't have Lupin flour. This worked fantastically. I also pressed a cutting board onto the dough balls to flatten them which works much better than a rolling pin❤.

      Did you used the ‘roasted soy flour/powder’? In Asia Japanese cuisine had these but I don’t know if it’d be the same as plain soy flour. It’s almost impossible to find Lupin flour so I’d also like to use Soy but not sure about the roasted/different types of ‘soy flour’

    I have purchased every single different kinds of every keto...; nut flours, flavorless protien powders, seeds, oatmeal fiber, coconut flour. You name it and I have a bag of it. I've tried dozens of combinations in order to find the perfect tortilla.
    These get a 10 out 0f 5 ✨ they are hands down the very best flat bread, period...

    Great recipe! I found a fast way to cook these is by putting a small ice cream scoop of mixture into a hot mini waffle maker for a minute, transferring to the tortilla press between silicone baking rounds, then finishing off in a non-stick frypan. I managed to cook 2 batches in 10 minutes.

    You can make tortillas from cottage cheese. Take the cottage cheese, make thin circles on parchment paper. Bake at 375 degrees for 30 mins under brown around the edges. Fill with lunch meat or other ingredients. You could also make pizza crust. Try it on one of your videos!!!

    The Zero (as in coke zero) makes sense.. same as in the sugarless cola you avoid something by replacing it by something that might be worse.. in this case xanthan. Depending on the substrate it has been "grown" on (it is made by bacteria) it can have harmful effects such as damaging the intestines.. Would be awesome to have a recipe with more natural ingredients..

    I have tried so many tortilla recipes and yours is the BEST! This is a combination of a tortilla and a corn tortilla. The lupin flour is the key to this recipe. I will no longer buy store made tortillas. Thank you so much. I think it is important to get it as thin as possible and that makes them very bendable. I love the flavor.     The Lupin is sooooo low calorie and low carb. Definitely trying it. Going to try to make cheddar mug bread with it. I will also try these and freeze them with parchment paper in between.

I was just thinking I should make some "fast foods" to keep in my fridge and you popped up in my feed :) I'm glad to see your link to Amazon for Xanthan gum is NON-GMO because Dr. Berg did a video on that a while back because it's made from fermented corn, soy and glucose. So I'm using your link to purchase the gum - I'll let you know how they turn out!

    The perfect recipe i was looking for..gluten free ..lowest carb..and corn tortilla type...i love corn tortillas but too many carbs..im so glad found this..i have all these ingredients on hand..plus already have tortilla press ..a red one just like this..4 huge rolls ..parchment paper ..and 2 bags lupin flour ..i try keep all flours in my up right freezer ..until ready to use...keep fresh longest .i have neutral and flavored coconut oil and kirkland brand ..real extra virgin olive oil also ..almond flour ,coconut flour..i have flax meal ..for any baking..i have ..bags upon bags of lilys low carb tiny choc chips for baking in freezer too ..if want make cookies..gee i need to get on this..i just dont do much baking ..i have bought a round top flat like crepe pan ..to pour batter on to make thin layered like tortillas on ..like homemade egg white wraps also..should be perfect to make them on ..

    Almond is so harsh on the kidneys, I am happy to replace some of it with Lupin. I first purchased lupin because of you actually. I'm desperate for coconut and almond flour replacements. Maybe you could work with some pecan flour? I purchased some, but haven't yet experimented. I'm glad you did this on video, I would not have thought to use wax or parchment paper. You don't need to with wheat flour.

    I don’t know what went wrong… But I spent 25 minutes scrubbing everything that my dough touched. Definitely a recipe for the more experienced cook… Ended up chucking all of my dough before it set hard on any of my surfaces!

    I’m using the same tortilla press you do, and dividing the dough into three makes a size perfect for the taco shells I’m replacing. I get the shape with a rack over a cookie sheet, and ten minutes or so in the oven after frying. More chewy than crispy, but I’m loving them!

    Annie, I watched your tortilla recipe and wanted to share an ingredient with you that I have been using for a few years for a big variety of keto bread and tortilla. I just stumbled on it on my own and have not seen anyone using it. It's Celery fibre. I have been doing that celery juce in the morning experiment where you remove all the fibre to make the juce, I used a nut bag to strain the juce from the blended pulp as I only have a blender and no jucer. The fiber left in the nut bag was almost the consistency of play-doh, I started to freeze it in balls so I could store it for use in recipes, I use alot now instead of psyllium husk in the classic tortilla no egg recipies that I've found online. I've mixed it with all manor of things it to flavour it, Celery is quite a mild savoury flavour on its own and works really great for keto because after all the juce is gone it's very low carb. I use it fresh or defrost a ball from the freezer, I even steamed a ball before to thaw it out in a hurry, and that also worked fine. I wonder if you may like to play with the concept for your channel because I watch your videos and would be interested on your take on this 🩷

    Oh, Annie! Now you're making me break down and buy lupin flour! I've been trying to avoid it! 😂 Is there a difference you (or anyone else!) has noticed between brands? I see the price varies quite a bit - I don't want to end up with something awful, but there's also no sense overpaying if it's not necessary. I see you used Anthony's and wondered if there was a special reason (bad experience with another, for instance) or just because Anthony's is such a consistently reliable brand? Thanks for the recipe and for any guidance. I'm eager to make these!

      You can fridge or freezer! To thaw from frozen, just put them at room temp for about 15 minutes.

    I believe that most oxalates are only higher in content by eating them raw? Almond flour does not contain raw flour.

    Can you make tortilla chips out of these? Maybe throw them in the oven or since they get hard cook with a little avocado oil in a skillet??

    This appears to be best recipe so far using lupine flour. The minute you advertised LMNT I was sold. I can’t do a day without my little packet of LMNT either as a meal finisher or the raw while I’m fasting and working out. Which brand of lupin flour do you recommend?

    I saw a guy do a ketp-comparison of 12 "keto" tortillas...checked his blood sugar after each one and said the one, Mission low carb, raised his blood sugar the most...but he did say they taste good. There are several others that did not raise the blood sugar tho...

      I’m trying to integrate more cheap, low carb, family meals. I’m also wondering if that could be used for aside of mozzarella sticks or onion rings. Even if I freeze my portion and still buy the kids the regular stuff.

    Is it possible to have a flex seed added recipe for tortilla ? Flaxseeds has a lot of nutrition and can help with certain cancer prevention. Really appreciated

    I think in Maria Emmrich’s site she goes through all the cooking flours and the pros and cons of each… I think Lupin was a problem as can causes insulin spikes in some.

    These fried up pretty good, but there has to be a seasoning I can put in them to make them taste better. Maybe chili pepper? Suggestions?
