My grandfather was a Bäcker- und Konditormeister (master baker and confectioner). He taught me when he was only a few years younger than I am now. I was forever getting in his way as a kid so he put me to work - at first to keep me occupied with something useful and then because he saw I really liked learning from him. There are many such videos out there but this one is the best I've seen because you really show every step without "acrobatics" or fancy tools and crazy music. The only thing I do not like about this video is the plastic flower on the work surface. It's not necessary and it doesn't look nice either. I know, so many do this now - put up all kind of decorations, plastic flowers, scented candles, lace napkins and whatever else... Doesn't make the recipe any better or the video any more interesting. It's your recipe and your skills that make the video a good one. You have both - no need for anything more. I made this and something is missing and i bake all kinds of bread. I think he added steam to the baking but didn’t mention it. I also used bread flour so had to change the water content and i think it needs more sugar my bread did not browned like the video and i baked for 20 minutes.

I used strong bread flour and they turned out nice but not like the fluffy texture, more stretchy which makes sense because bread flour has a lot more gluten. Tienes mucha razón, es un pan realmente delicioso. Sin embargo, un pan así de esponjoso y con esta consistencia no se puede hacer con harina sin gluten. Pero todavía hace un pan delicioso.
