      @CatherineShoresHMN Yes, you can do potatoes that way. We have a freeze dryer and we have made au gratin potatoes. We thin slice and blanch the potatoes.

    Hi Becky! First time posting here! I really 6:43 enjoy watching your channel. I am a Portland girl who will probably never have a homestead. Never have canned and dont cook much at 70 years old and have MS. BUT after watching you I ordered 4 canning jars and made cucumber pickles and pickled red onions. I love them.     Today I was prepping the last of my Garlic from 2024,( following your instructions for Garlic pucks). I Accidentally dropped a head in some warm water...Oh MY GOODNESS. The garlic skins came off so easy and wasnt sicky at all. I threw all of my garlic in a pot of warm water for an experiment and i was done peeling in a lot less time then normal. The longer the garlic sat in the water the easier the skin came off. Becky you gotta try it..

      I read somewhere that soaking in water helps skins fall off so when my husband and I processed our garlic this year that what we did and it worked quite well.

    I was watching some of your older videos and I am so happy to see the tone of the comment section have changed from what it was up to a year ago. Some of the comments back then were highly critical, mean and some were downright nasty, it’s like people expected a Food Network type vlog, I don’t think they will ever understand the draw of realistic content especially in this age of fakedom and AI. This is what I love about this channel, it shows the realism of home cooking and cleaning and gardening, there’s going to be messes, and spills and spoils and sometimes even things that don’t turn out and have to be discarded, we try to minimize the mistakes but sometimes it happens. So Becky, keep being you and doing what you’re doing. You have a very supportive community ❤

    Becky...I have been a fan for a long time, and I have been meaning to tell you something for your own good... I am a 65 yo woman, and all my life i just picked up stuff and walked off with it because I was strong enough to do it... I now pay for it with back issues... Please know that I mean this from the heart... Instead of filling up big pots of water and carrying them to the stove, bring pitchers of water to the pot... That is what I do now that I can't lift that kind of weight (8lbs per gallon). Please...I wish someone would have told this to me when I was your age... Too bad that you don't have a pot filler, as much as you cook... Love and hugs! 😀

      I did the same thing when I was young. And my Grandmother constantly warned me, but I thought I was invincible. I'm 75 now. Suffered with severe back problems for years, finally 5 years ago gave in to back surgery. Things didn't go well, and im now in a wheelchair. Still a lot of back pain and unable to walk.

      She now makes $ 19,000 month and more depending on viewership( utube financial shows how anyone can figure out what one can make) so with her hard work making videos from a few years back she was financially set to buy that acre homestead she’s now in. That yard scape she did was not cheap at all! But she worked for that. I believe we all can try. 😊

    Becky!! Almost 790K!! I don’t know why I just noticed this today. I am so proud of you!! Last January I found a deal for potatoes. I blanched and froze them. They turned out better than I realized. We don’t like the texture of canned potatoes. Thank you for sharing your experiences with us. I, at 56, have learned a lot from you over the years. One of the best things is to try something new and jump right in. ❤❤❤

    I love freezing mashed potato’s . I buy a 25kg sack and peel loads of them boil them till soft and mash them then I use a scoop I think you call them cookie scoop their. here in the uk we call them ice cream scoops . And freeze them on trays then put them into a freezer bags and take out what ever I need and put them in the microwave from frozen . A massive time saver and they are just like fresh mash .

      Hi yah I add the butter and milk once the are thawed and heated . They taste just like fresh . So handy when you are short of time . Just put them in the microwave from frozen and they are hot in min .

      I've been making mashed potatoes, complete with milk, butter and nutmeg, then cookie scooping and freezing the whole batch. I pull out 2 serves worth to heat in the microwave, together with the 2 serves worth of whatever pre-cooked meat we're having. I always cook in bulk and portion out my meals in silicone trays. Texas muffin forms are great.

    I click the moment you post. I use my potato peeler like a paring knife( pulling it towards you) this helps peel the small potatoes and they don’t slip in your hand. Love your channel, I can’t believe you don’t have a million subscribers. Cheering for you!!!

    A tip for a steaming pot!! When you take a lid off of a pot of boiling water or are pouring pasta into a strainer from a boiling pot, blow the steam away from you so it doesn’t burn your hands or face. My mom had 3rd degree burns from a kitchen mishap so I did a lot of research on minimizing the risk of burns in the kitchen. Blowing the steam away has saved me several times!

    Hey Becky next time you make your regular potato salad try adding 5 boiled eggs and some diced up bread and butter pickles as well as your celery, onion, and fresh dill. That's how we make a good Southern potato salad. You can add some of the pickle juice to your dressing for great flavor.

      Minus 20 C here in central Alberta. With the wind chill -35 c. Tomorrow and Sunday even colder, so it sure is nice to see green grass and chickens enjoying the outdoors on Becky's channel. Potatoes were on sale here 10Lbs for 6.99, and I was wondering what to do with the some of them before they spoil. Now I know!!

    Hi Becky. Yes it's completely normal for that variety of pumpkin to turn that color. I grow the same. At the end of winter coming into spring when they have been stored for months they turn that way. It's becoming softer and needs to be used first. They sill store that way for a couple of months but need to watch them. 😊

    Surprised Becky doesn’t have those crank slicers for cheese and vegetables. Makes things go so much than a mandolin. In fact, your food processor can do that also🤗

    Hi Becky! My aunt preserves potatoes every year...French fries, and diced potatoes. She peels them, then fry in oil for 3-4 minutes, lay out flat on a cookie sheet, flash freeze them then vac seal. They make the best french fries/fried potatoes!

    Hey Becky! I have been soaking chopped , peeled potatoes in salt water. While 2 hours is enough, I let them soak overnight. The flash freeze
    on parchment on a jelly roll pan. Once frozen, I bag them and keep frozen. It's just like haven frozen hashbrowns. So much easier than blanching.😋😉

      @ Do you mean as they’re freezing? That’s why after you drain them, they’re spread out (as you can see in her thumbnail pic) on baking sheets to freeze. Once they’re frozen you can move to a ziplock bag.

      I use the palm of my hand on the vegetable to be cut after having one of the guards flip over and cut the tops of my knuckles. You have to keep the palm skin taut and fingers pulled as far away from the cutting surface.

      I bought an electric mandolin years ago. It’s been awesome not having to worry about chopping fingers. It’s has a shoot like a food processor so your hands don’t get close to the blades at all. Best investment I ever made!

    Harvested blue pumpkins turn orange when stored in a cellar because the orange pigment beneath the blue skin is naturally developing and becoming more visable as the pumpkin matures and ages during storage. Even though the exterior color may appear blue, this process is essentially the pumpkin continuing to ripen off the vine, with the orange color becoming more prominent over time.

    Since you mentioned wanting to put them up in a form you would buy, have you also considered grating them in your food processor and then dehydrating them? I keep potato flakes on my shelf as a thickener for cream type soups. It's quick and very handy.

    In future try this hack with the teeny tiny ones, break off the growing eyes, wash and boil whole, unpeeled. When slightly cooled the skin is easy peeled away, often with just your hands. Great for potato salad, potato soup, smashed potatoes or fried potatoes or add at last hour of a roast or chicken in oven or crockpot. Yum!😊❤

    Hey Becky! Just a future suggestion... I preserve by making mashed potatoes and then scooping with an ice cream scoop and freezing - then into a zippy bag. I also do this and add chives and garlic with a little cheese and use a cookie scoop, roll in bread crumbs, to make into tater tots. I thaw the mashed potatoes in a pan on low-med. heat with a bit of water or milk for about 10 minutes. I top with gravy or spread over Shepard pie. SO YUMMY!!

    Ohhhh Becky…. my yard - knee high snow. Had to plow 3 x this week alone. Seeing GRASS was quite the treat. 🥰
    When my hens became ancient, I ordered babies but also 4 hens at 12 weeks old. They started laying within a couple weeks- the babies, much longer but I said- I’m NOT buying store eggs 😄. They just don’t taste good. Hens under a year are poulets and lay all year round that first year, then the babies start laying and they’ll lay all the next winter 👍 so that’s close to 2 years of always having your own eggs 😊

    I make French Fries. Drop in hot oil for 2 minutes. Drain on sheet pans, flash freeze. Put in gallon bags. The oil keeps them from sticking. You can slice if preferred.

    I just got done processing my garden taters too. I made a huge batch of mashed potatoes and froze portioned into quart bags, as well as what you just did. I love the versatility of frozen diced potatoes. We do a lot of "farmer's eggs" (eggs, sausage, onions, garlic, peppers, etc) For us, we love the frozen homegrown taters.

    My late mother in law used to partially fry French fries from her homegrown potatoes. They held their color well. When she wanted French fries she would fry or oven bake. They were really good!

    Regarding planting potatoes, one year I decided to try the back to Eden method of replanting the biggest potato at the time of harvest and just leaving it to overwinter in the ground. It worked great! I live in a zone 5 Colorado. I was pretty amazed!

    I'm so glad you discovered this!!!! Back when our six kids were at home with us, I did this to store bought potatoes that I wasn't going to cook before they may go bad on me. At that time I was buying 10-20 pounds a week. I forgot how convenient this was to have on hand-and believe me--you're going to LOVE having this "convenience " item the next time you want mashed potatoes, as you can toss your frozen bag into a pot of boiled water!!! The wonderful thing about this method to cook-your potatoes do NOT break down as they do when you boil them, so you get 100 % of the meat from your potatoes!
    I sent your video to my Dad as we have been trying to come up with another preservation method, and like I said, I completely FORGOT about this! Now we DO like canned potatoes, especially fried in butter but this gives us a lot more options. It will also cut down on what we spend at the store!!! Love, love, LOVE it!!!!❤❤

    Good morning. Your potatoe gnoochi recipe works so well for my Chicken Soup and other dishes I am such a fan. I vaccum pack them and freeze them to use when needed. When daughter was sick she said she loved the dumplings in the soup. This is another good way of preserving them! Yes I love pot fillers. When you remodel your kitchen I also suggest having a pot filler added to assist you in saving trips from sink to stove. However with your and my 30 qt pot you would need to attach a hose or have your pot filler at a almost to high level. Love mine in a former home we had. 😊

      I blanch my potatoes all the time . I blanch then in different sizes for different things I make.

    Because I watch you I now have 10 laying hens, a pressure canner, have garlic in ground for next year, have a small asparagus bed that I can start harvesting from in a couple of years, have a plan for 2025 garden. Trying to turn my little bit of acreage into a homestead.

    11:41 A suggestion? Next potato harvest, use the small potatoes first. Scrub them down & roast/cook them with the skins on so there’s no peeling. Or peel them if you want. Maybe 5hen it won’t feel like such a chore since you’ll be new in the potato harvest season. If you have any left like this, they’ll be bigger & not such a hassle to peel. 🤷🏻‍♀️

    I don’t have enough freezer space for my potatoes so I just can them. Works great. The little ones I can whole & the lg ones I cut up to fit in the jars. I usually use them for hash browns. I just cut them up when I fry them. Cook really fast cause they have been pressure cooked all ready when I processed them.

    I live by myself so I can't go through a bag of potatoes before they go bad so I love to freeze potatoes so I can just take out what I need and have potatoes for when ever I need them

    With the small potatoes, we use to just put them in cold water and boil them for about eight minutes. (Until the skins start to split.) Then let them cool a little and peel them byhand. You don’t loose too much potato in the peeling that way and you can still mash, roast and so on.

    Becky I do cubed potatoes and French fries and sliced potatoes I wash but don’t peel cut into what I want then season but on trays preheat my oven and then bake them 25 minutes take out cool for ten then put trays in freezer for one to two fours to flash freeze then put into bags mark them and freeze them I have them all winter for all my recipes…easy same for sweet potato and this year I’m gonna try my dehydrator to process them for my pantry

    I heard that freeze drying potatoes in french fry cut is best. You can rehydrate to make french fries, dice for hashbrowns or boil and mash them from that shape.

    Becky, you should look into storing potatoes in soil. Jamie Oliver has a video about his garden where he talks about long term storage of potatoes by covering them in soil.

    ❤❤❤ Hi Becky. I've been processing potatoes by freezing them for years. I prefer to prep potato, then partially roast before freezing. They make great hash browns, breakfast hash, and 'baked potato soup'.

    Becky, I make hash brown/diced potatoes for freezer too, what i did was diced them and then put oil on parchment and put potatoes on them and half roasted them, then slid parchment of roasted ones onto a cold cookie sheet, and quick froze on it. Then raked them into a freezer bag. When I want breakfast potatoes then it only takes a little oil or butter in a pan and seasoning and in no time they are done. They are just like the tiny diced breakfast potatoes you buy in the freezer section in store. Sooo good.

    I will bake my potatoes then cut them up into hash brown size and freeze. I also do twice baked potatoes and freeze before the second bake. So good and I do not get any discolouration.

    Hi Becky. You know, if you want to try that potato salad again, I would season the potatoes with your favorite seasoning, (ours is ranch) and bake just before it's time to eat. for the dressing I would make it way ahead with the other veggies and then try serving the hot crunchy potatoes with a dollop of that cold sauce on top. You could even serve the "salad" on the side and use it as a dipping sauce for the spuds. I so appreciate you trying all these recipes so we can see the ups and downs before we try them.     I make mashed potatoes just as I would for dinner but large batches. I fill a foil pan then vacuum seal the foil pan. Date and freeze. When ready I thaw fully or partially and bake in oven at 350. Mix well and serve. We love them.

    Hey Becky, just FYI I process my potatoes to freeze in 2 ways: 1) cut them into french fries , blanch them and then put in a tray to freeze( add salt and spices). 2) cut them into thick rounds and make small cuts in each sides, blanch them and add salt and spices(similar to accordion potatoes) and put in trays to freeze.

    I have done this blanching process many times for potatoes. I just quarter them and then blanche them - then dry them on dish towels then I put them in freezer bags for the freezer. I don't do the flash freeze. I have potatoes in my freezer from last summer and I love them. I live alone and often I just need a few at a time so I take out enough for one serving and boil them till they are done then I drain them and mash them and they make the best mashed potatoes. I have not had one potato change color and they are as white as when they were fresh peeled. They make great additions to a pot roast with carrots and onions. This blanching procedure is wonderful and I will certainly use it anytime I have a bunch of potatoes. The hardest part is just peeling them.

    Becky, I used to make smashed baked potatoes. Start like you did and smash them, return to the oven. When they are nice and crispy, top them with a dollop of sour cream, a heavy amount of shredded cheese, and a few bits of bacon. Return to oven long enough to melt the cheese. They make a beautiful side instead of a baked potato!!!

    I don’t know if this will be of help for your next pumpkin process but it works great for me,so I’m going to share. Add the strainer into another bowl with water and squeeze the pulp, the seeds will separate and float, pulp will sink. It’s been the quickest method I’ve discovered.     Thank you so much, Becky. We have been watching you and your family get it all done. We are wasting less and saving more money since we have. We're preserving so much now using your tips and freezing foods before they go bad.
    Where is your paper bag? (Your mother probably already asked). I peel into any bag I have.
    I agree, the cubed potatoes are also great to roast to go with baked fish. Add other vegetables too. Easy one pan bake dinner. My other half even does this for himself often.

    Hey Becky, dont put the peels and little potatos in ur beds or you may have potatos growing there. Even on your compost may grow same but there it does not matter. I have had some good harvest of potatos from the compost. Yes if they grow on the compost, you can eat them. After all its just plantmatter turning in to dirt.
    I have done frozen potatos like that and they do not go grey and are great as fries, jojos, hashbrowns, i have used them in soups.. they have always been great and they have been from my garden. I think you will like them too. ❤

      I second the suggestion to not compost in the garden but in a compost pile instead. I too have had some amazing harvests from compost pile potato plants!!

    I found that my pressure canned potatoes came out with a roasted flavor. They were really tasty..and made very tasty mashed potatoes. I used Gold potatoes and topped the jars with water. 👩🏼‍🍳 And thanks for the honest update on the potato salad… I’m now curious and will have to give it a try. Hope everyone had a great weekend.. It’s a fabulous sunny and 74 here in East Texas.. High Thursday around 80. Of course by next weekend, back down into the low 50’s.

    I use my old kombucha bottles to freeze water. I use these frozen water bottles in lieu of depleting all of my freezer ice when cooling anything I’m blanching or potatoes/noodles. Then I don’t have to pick out tiny pieces of ice. Plus they are the perfect size for my stainless steel bowls. I just love all your videos, thanks for all your hard work!!!!

    I found that leaving the skins on the potatoes will make it crunchier! I've tried both with skin on and skin off. Freezing potatoes is new to me, so I really enjoyed learning about it! Thank you, Becky!
