Wow, this takes me back about 40 years to when my uncle was partners in a cattle ranch with a Mexican man who taught him how to make this cheese. I remember my first taste of fried homemade cheese was as a blissful revelation, so thanks Buck and CG for bringing it back to me. 🤗
My Columbia friend taught me about that cheese yrs ago and loved it since. I know live in a hick town so it is hard to get good staples like that. Got to drive over a hr to get good groceries. Thanks for sharing great memories. 👍❤💋✌🇺🇸

OOOOH MAN! This stuff is good! I have been grilling and frying cheese for ~20 years and it is awesome! My personal faves is halloumi Egyptian cheese, minced garlic, lemon slices (or just the juice if you don't like the tart flavor); all of it drizzled with a homemade balsamic reduction. Tip: if the lemon is just too much, just make the balsamic reduction with a bit-o-honey to sweeten the reduction and it is "la dolce vita piccola!!!!" I have also put Medjool dates in a light oj brine overnight for the halloumi dish. You can't screw it up!!! Thanks, boss!
There is a difference between Blanco and fresco. The latter is made using rennet and the former is curdled with an acid like vinegar. Also, massa you showed and corn flour are not the same at all. Massa is made by being processed with an alkali like lime aka potassium sulfate.
Ahh if you’ve never had saganaki from a Greek restaurant I highly recommend it! Delicious fried cheese and I’m hoping this video can help me out with that cuz I’ve have a plenty full of disasters trying to make it at home.

I fry brie and camembert cheeses. I buy them relatively cheap in the supermarket. The expensive camembert just punktures and run out all over the skillet. Back in the 1970'ties we had small triangle shaped camembert cheeses. They were the best for frying cheese.
I have been frying cheddar cheese for over 20 years now and it’s absolutely delicious 🤤. I just get the skillet hot put the cheese in the skillet and let it do it’s thing…turn when you see lots of bubbles just please be careful because it’s super hot and stringy. I’ve never tried it like this but this seems interesting 🤔 too 😅
Here in Texas, it's almost impossible to find a supermarket that DOESN'T sell a dozen varieties of queso blanco. Cut in small cubes, it makes a good low-carb substitute for potatoes when frying up corned beef. I started the new year with a wallop of nutritional goodness: sauteed a container of chicken livers, with steamed fresh yellow squash on the side. Not to everyone's taste, but I was that weird little kid who liked liver. Hope you and Camera Girl have a happy and peaceful 2021.
chicken livers is one of my favorite dishes! I Corned Beef hash is a regular fave of mine as well, but I've never tried it with cheese cubes added--sounds like a great idea

you can use either Corn flour or cornstarch for a light coating on the cheese before frying...they're both corn, but corn flour is made with whole kernel corn and will add a little more flavor, while cornstarch is made from just the "starchy" part of a corn kernel and has almost no flavor when cooked (because it's starchy and flavorless cornstarch makes a great thickener)

I had eaten it cold with Chorizo (the cheese doesn’t really melt) and wasn’t a huge fan of the chorizo....but I LOVE Mexican food so I’ll try it this way! No you need Tropical is best perfect salt etxt not too wet soft good mix consistency that melts fries stretches. Not as yummy as used yo be but bigger size like of 2 count no coating. Do not use Queso Fresco, it is not for frying. Queso Fresco is a crumbly cheese with higher moisture content. Make sure to use Queso Blanco for much better results.

Hello! Corn flour--the product you are using, is it the same as regular boxed corn starch or a different type of Mexican product?
