16 oz. dry beans
8 quarts water
pork jowls
salt, pepper, garlic, onion powder
cook low, 4 hours
cornbread
1 cup cornmeal
1 1/4 cup all purpose flour
2 t. baking powder
1/2 to 1 t. Salt
sugar opt.
1/4 cup oil
1 egg
1 1/2 cup butter milk
2 T. oil for skillet
oven 400 till golden brown
chicken 1 11/4 cup self rising flour
salt, pepper, garlic ,paprika
2 inches oil or lard in skillet cook 6 minutes, turn over put on lid, cook 6 minutes, take off lid cook turn cook 6 more minutes

I was born and raised in southern louisiana. Learned long time ago if your beans are too soupy just smash some against the side of the pot. They will thicken right up.

Are you can just leave them on there to cook slow and they'll thicken up on their own and I think that's always the best way. I love beans I'm from Louisiana Monday's was my favorite day for beans and rice.

When I came home from kindergarten for lunch, my Mom would have butter beans waiting for me. She always buttered bread and then put the butter beans on top. You are the first person to do this that I have seen. What great memories from over 60 years ago! To this day, I will have butter beans and it always is a connection to my Mom who passed almost 20 years ago. Thank you for cherished reminder!

To this day, I still look my beans every time I open a bag. You'd be surprised how many times you find a rock or a big dirt clod.

Staying warm here in Illinois. The storm is almost here. The Temps are dropping & the wind has really picked up now. I made a big pot of chicken and noodles, mashed potatoes and garden corn last night, & a huge pot of vegetable beef soup this morning. If we lose power we have some goodies already to reheat on top of the stove. Yum !!!! Thank youfor being you !!!! Stay safe & warm !!!! Enjoy loving on those babies !!!!

I always heat my iron skillet on top of my stove and if I have any leftover bacon I put it the bottom of my skillet then pour my cornbread mixture in.

The food looks so good. I remember my aunt cooking on her wood cookstove. She raised 6 children in that house. Number seven came along after the kitchen was modernized. The old stove was sent to the washhouse where it served as a heat source and water heater for years. I took baths in a big tub in the washhouse staying cozy and warm before going back into the big house thru the snow.

This is my fav one because, at 72, this Okie still cooks this way. But I no longer have my Home Comfort wood burning cook stove, so I cook on the flat surface of my Lopi wood burning heat stove. Perfect size to simmer a pot of beans on all day.

Growing up, my Aunt had a wood cook stove and a gas stove. Here in Wisconsin we would all gather at their house for deer hunting and Thanksgiving. It was at the same time. That wood stove was going all the time. With food, drying hats, mittens, boots and what not. Keeping us all warm at the same time. I'm only 53 and thous are the days I miss. Watching you in your kitchen brings back a lot of memories from when I was a kid. By the way I love Mr. Browns bib overalls ! ! ! P.S. thank you Mr.Brown for reading from the Bible on Christmas Eve. Mama was adamant that she add the salt at the beginning, and I definitely find it has a better flavor than adding after they're done. I use dried onions, oil (veg or canola or olive) and salt. Delish

We are getting really cold weather inPa. Not happy about it. I wish we had a cook stove. My other two sisters have real ones that work really well.
I remember my Grandmother cooking on a wood stove. And the biscuits…oh my goodness! And the stove we had, had a deep well in it. That’s where Mother cooked our beans. Still slow-cooked….so good.

I have a little gas stove that I can heat up vegetable soup or chicken soup. So I’m ready for keeping myself Sustainable with food and heat. Stay warm and safe.

My grandma had a old wood stove I remember her building a fire in it when she had to cook she had a kindling box grandpa always kept full she also burned coal a lot.here in Eastern Kentucky coal was abundance.she would string her beans and hang them behind the stove to dry love shucky beans.
I wish I could be there and SMELL this, let alone get to eat it!

That reminds of when I drew up we had a wood cook stove and mama would cook on it she would cook everything because that only stove we had. Everything taste better mama use lard it didn't make no one sick back then,she make biscuits they were delicious nobody could make biscuits like my mama. Someone taught me a recipe that I do every so often it’s called everything but the kitchen sink in the beans. You start out with the beans and the salt pork an hour later add a couple of chicken legs, another hour later add some red potatoes and when everything’s done Got a meal with the beans just make a pot of rice oh and we had jalapeño in the beans a little bit but it is so good I don’t make it too often but when I do, that’s the meal beans, the chicken legs and some rice. It is so good I’ve made it for people the red potatoes do not disintegrate think the starch in the beans helps it.

This meal takes me back to my youth. My Momma cooked her beans just like you do. Low and slow. And I’m like Mr. Brown when it comes to chicken legs. My favorite way to eat them is when they’re cold. We ate plenty of beans. We were a family of seven and my Momma was a stay at home Mom. We didn’t have much money so we had beans and cornbread with fried potatoes at least three times a week. But on Sundays after church we had fried chicken and occasionally we had roast. I don’t understand the concern of taking off your wedding rings to cook. I promise you, none of my grandmothers took off their rings to cook and neither did my Mom. They put out the best home cooked meals and not a single one of us got sick. I’m pretty sure that hot grease killed any “germs” that was on that food. Thank you for taking me back to my Momma’s and my grandmother’s kitchens. 🥰❤️
Hi Miss Lori- I thought of you this morning- I was attempting to make cinnamon toast. I toasted the bread, buttered it, reached in the cabinet and grabbed my cinnamon sugar. Gave the toast a very generous sprinkle. As I'm putting my "cinnamon sugar" back in the cabinet I notice my container of cinnamon sugar on the shelf. I looked at what I had in my hand and yep, you guessed it-garlic powder! I thought well, Miss Lori would call that a happy accident. I hope you and yours have a wonderful Christmas and New Year!

Hello Ms Lori and Mr Brown. I have been a fan for a couple years now since I discovered your lunch lady recipes. They reminded me of the good food we had in school when I was a child 🧒 so delicious and homemade. Those ladies were the best cooks and I could tell they loved feeding us. Everything was good to me except hominy which I couldn't stand the smell of it lol 😂. I'm from Stuttgart originally and I love you both as friends and family I'd love to have! My husband loves the large white Lima beans with potatoes and ham in them. It’s cooled off again here in Mississippi so I’m putting him some in the crockpot tomorrow night and let them cook low and slow all night. Also, our 35th anniversary is Sunday and he’ll be gone out of town working so I’m fixing his favorite foods on Saturday.

Hello from Wisc! We have an Ashland cookstove in our kitchen. Re your beans...My dad's mom made blonde baked beans because that's how grandpa liked them. My parents married in 1938 and mom couldn't cook. Mom was raised on brown baked beans, and here she is a new daughter-in-law and wondered what went wrong with the beans cuz they were blonde! Gramma used very little molasses and white sugar. Mom made brown beans in a bean pot with salt pork in them. For forty years I've made brown baked beans. If I made blonde ones our four kids would have most likely stuck their noses up at them! Ha! Keep the wood box and teakettle full! Blessings to you for 2023 †
