Interesting recipe, Andrew. I like to cook my chili in a 17" skillet on my 26" Weber grill to give it the actual hickory/mesquite smoked flavor. I was at the store today and found a brisket flat on sale. I was wondering just how to cook it and found your channel. I'm sure that I'll visit again. Thanks.

Josh Hudgin chili is sort of like soup! You can put whatever you want! Some like beans some don’t. Some brisket, sausage, venison, steak, black beans, kidney beans, no beans. Whatever the “chili” cook desires. Now....it’s ok to say I don’t prefer beans in MY chili, but you shouldn’t say chili only has meat but no beans. I’m from Austin Texas and even there some chili has beans while others don’t.

What is your view of crisping bacon first?
Do it and use the fat to cook all the aromatics. Then hit that with a pint of dark beer.

Uhh bam yeah you can use any beer you like. Personally the only thing I would avoid is an ipa simply because of fruitiness I’m the hops .
