It was very interesting to see the difference in your test. I use Vitamin C powder which does the same thing. One pinch of the powder for each 250gms flour. I would never make bread without any improver again.

Smell like baking soda it means I need to readjust baking soda quantity.... Little darker in colour from outside..fine taste wise. . Overall a good result just need to hold the quantity of baking soda to rectify colour and smell problem

There are different kinds of yeast . If you are using instant yeast , you can mix straight to the dough but if you using active dry yeast , mix with warm water and little bit of sugar.
