Dandelion Syrup Recipe and Canning- AKA Poor Mans Honey

  • Dandelions grow everywhere and most people do not like them in their yard. But I do!! The more the merrier! In my book this little flower is not a weed…its gold. All parts of the Dandelion plant are edible, from the flowers to the roots and they are full of vitamin A, C, and K. They help relieve allergies and they taste so good! This week we are once again focusing on the flowers to make a delicious syrup. A syrup that tastes like a mix of honey and molasses. Its also known as poor man’s honey… and for good reason. It tastes like honey, and you can make it for pretty cheap. All you need to do is go for a walk and gather some dandelions flowers and add some basic ingredients and you have “honey”! Learning how to make your own syrup and not have to buy it is just one more step to being self reliant.
    DANDELION SYRUP
    1 Quarts dandelion “fluff” (you need a lot more than 1 quart of whole flowers)
    2 Quarts boiling water
    2 Tablespoon lemon juice
    1 Tablespoons pectin
    2.5 cups white sugar
    ½ cup Brown sugar
    ½ vanilla bean
    To prepare flowers:
    Pick dandelion flowers and remove as much green as possible. You want just the yellow “fluff”
    1. 1 Quarts packed dandelion fluff (green bulbs removed)
    2. 2 Quarts water
    3. Combine dandelion fluff and water in a pot on the stove. Boil for 3 minutes
    4. Let cool and steep for 24 hours
    5. Drain off liquid and keep dandelion juice
    To Make syrup
    1. Measure 3 cups liquid from dandelions and add to a large pot
    2. Add in all other ingredients
    3. Simmer on low for 2 hours (stirring about every 5 minutes) or till thickened to a consistency that you like (remember that it will be thicker when it cools)
    1. Pour into hot sterilized jars.
    2. Close jars with sterilized lids and rings
    3. Put into a water bath for 10 minutes
    4. Take out and let cool
    If any jars do not seal put them in the fridge

    I have 13 acres and dandelions grow insane here!! I just canned 20 jars of your absolutely delicious recipe dandelion jelly, I just made a gallon of dandelion tea to drink, and I found a lovely dandelion bread recipe I’m gonna try today 😊

    I enjoyed this and dry dandelion flowers and leaves for tea and doing a tincture, infusion this year. Will look to do your syrup recipe next spring, God willing. Thank you.

    For me, you can’t find naturally growing dandelions anywhere in my neighborhood. My chickens eat any dandelion sprouts that come up before I can pick them in the backyard. Everywhere else is treated for weeds. I really wish I could make stuff from foraging, but my family thinks it’s weird to find uses from weeds and wild plants :(. That syrup does look good, though!

      Maybe take a drive out into the country somewhere? Hope you can find some. The syrup is really great.

    Hey Liz, thanks so much for this. I have a yellow lawn in april/may and have always wondered what to do with them. And any plant on this planet that is so hardy has always a great use... nettles, comfrey, plantain etc... I have a glut of pears this year... combining the syrup with pears in cans, that'd work no? That'd preserve them there pears for the winter and be yummy? Also... how many jars d'you have please? I'm going much more country in a couple of years when the kids leave home and would like a gauge of how many jars I'm going to need... as an aside, love this kid, looks just like his dad... my youngest has always been a great sous chef and the eldest has trouble cooking pasta at 17 😁

    With inflation so high in Canada right now this is going to help me so much especially for the upcoming cold seasons. Whats the shelf life?

      As long as it’s sealed it will last for years .

      Well this was our second batch of syrup ( his request to make more) and my boys are never made to be in a video. They can come and go as they like during the video.

    Will gelatin work instead of pectin?
