    Good morning Heidi! I'm so excited to tell you about my raisin starter and wine. I was gifted 2 huge flats of grapes, so started a raisin starter (per your instructions) immediately to make wine with some of the grapes. I was flabbergasted when I fed my starter after a few days because it bubbled up in the most gorgeous, surprising way. I've made kombucha successfully and had some wonderful bubbles with that, but the raisin starter was completely different. Beautiful! My sisters and I talk about your videos all of the time, one of them is also using your fermenting and wine making instructions. We are having so much fun with it and reference your videos often. We live far away from each other and your videos have given us something that makes it feel like we are closer together. Thank you with all of my heart for what you are doing here. God bless

    Heidi, I have been making your fermentation starter for a couple of years. I love to drink the fermentation starter juice before I refresh it. I had some wild blackberries on the side of my yard and I kept it going for a year until it got really mushy. But it sure was a refreshing drink on its own. I'm excited to try what you demonstrated today so I can have a bigger supply. Thank you Heidi. You are truly a great kitchen chemist. 😊

    This is awesome!! I have so many herbs around my yard that I don't want to go to waste and I need probiotics every day. I already wanted to start fermenting, but I didn't know I could ferment so many things! I never would have thought of dandelion or clovers or orange peel. I am SOOOO excited to start these!! Thank you so much for making this video!!

    I use coconut milk (pure) kefir and it is the only thing that works with my system. Everyone is different. Don't give up if the first thing you try doesn't work. I tried home made yogurt years ago. It didn't help and seemed to make GI things worse. So, keep trying until you find what works for you.

    If your environment is too cool, a seed starter mat is great to sit your ferments on.

    The dandelion and rose vinegar I'd started didn't have enough sugar so I added more. The second or third day after that I almost stopped it right there! It tast5 so good and smelled so good! If I wasn't out of vinegar for my hair, it would be gone now!☺️

    Heidi I used to make kombucha. I need to order a new scoby and start again. I really like it.
    So far this week I've foraged yarrow, roses, pineapple weed, water mint, and wild garlic. I've made more rosewater for my son's skincare, and a type of garlic pesto with wild garlic, walnut oil, and Himalayan pink sea salt. I've also planted up some water mint, self-heal, yarrow and pineapple weed. My herb bed is going to be so full of useful herbs ready for when the food supply chain, global economy, and medicine supplies collapse.
    I've also made kimchi this year.

    Just watched your thyroid video. I am reluctant to take permanent medication so thank you for your information. Knowledge is power and I agree, we lack information these days. Lots of dis/misinformation. Also appreciate the clean food suggestions!! I am hypothyroid and looking for natural solutions

    Great info Heidi. I'm going start doing this! I'm tired of buying soda and this is SO much better for you! I'll try to remember to give an update.     Water kefir is my favorite. I started making it again late winter and have a good culture growing. This time I was smart and when it grew I dehydrated some and put them back for later as well as putting some in sugar water in the fridge. I make mine fruity and used a lot of your advice in your older videos to help me figure out the combinations and ratios I preferred. My very favorite, and the one I get the most fizz making is lemon lime.

    I do this exact thing with 1/2 cup of Keifer water per half gallon Thank you for helping us widen out, I love the spruce tip idea.
    I have a 3 year old (your recipe of course) raisin vinegar that I pour off, feed and fill back up.

      Can you please tell me how you make your hibiscus soda. For some reason when I add Hibiscus it seems to kill the ferment. I have tried to ferment them alone, with other fruit and also to just add them for a second ferment....alas it kls it every time.

      Sure:) I use a ginger fermentation starter...and that stuff I put in hibiscus juice...day 5 we drink it:) like the color...im native German/ Spanish speaking:) hopefully my English is not to bad

      I have also noticed when I use hibiscus, it does not get as bubbly so there is clearly something in it that stops or slows it

      I use a recipe from the internet...3or 4 tablespoon of ginger in 3/4 cup of water...and every day 1 teaspoon of sugar...that's the fermentation starter...my mom uses hibiscus for jam/ jellies...uses a lot of sugar:)...

    Have made and consumed kombucha for years, but I don't like fizzy drinks so I only ferment once. I have never tried kefir....may give that a whirl.....and I like ginger, so I may give that a go....thanks for this video.

    We have tried kombucha, but DH didn't like it. (I don't drink fizzy stuff.) I tried making a ginger bug, since he likes ginger ale...but it didn't work! I like the idea of "using what you have" to make the starters.
    I think I'm going to try again. It is a good skill to have in my toolbelt.
    Our two oldest grape vines are producing this year! As God blesses, next year the ones we planted this year will, too. I want to be able to make wine. Thanks for conveniently listing the wine playlist.

    Those pancakes that you made in the last video with the maple syrup look delicious! I haven’t been watching your videos much lately because my knee hurts so bad that I can barely do anything that’s in them. I now realize that your videos make me in a much better mood and I should’ve never Took a break from watching them! Hopefully this brace that they prescribed me can get me around a little easier until the surgery.     Heidi I love this video as usual with all of your videos. I’m especially interested in the spruce and pine. I do have a foraging book and a good book on edible plants but I do want to zero in on the spruce and the pine to make sure I do not get the wrong one. We have such a variety here in Kentucky and Tennessee

    I made a gallon of medicinal spruce tip oxymel last spring/summer that is only down by about a pint and a half now, but this would have been a much easier and less expensive thing to make. Shew! (But I’m glad I’ve had the oxymel when I’ve needed it.)

    Kefir is new to me. I'd like to see you do more in that area, pls. Great video, by the way. You show so many choices of ferments. How do you figure it all out?!? I want to make some Mead, honey Mead. Will you do a vid on making it? I've never been successful at ...... Not even started sourdough....lol

    Sound like your making the yeast water that our grandmas always used for breads and stuff. I made it a couple times with grapes and loved it but just didn’t know how to make bread with it. Pablo’s yeast water on RUclips is a good tutorial too.

      U are absolutely right! That is fruit yest...Just separate fruit, add some organic row sugar and organic whole rye flour, make consistency like sour cream, keep that in the fridge...just leave cap loose....feed that every uther day...with sugar, water and rye flour....that is starter for your bread...

    My favorites so far involve a starter such as a ginger bug and more ginger, fennel, or hibiscus. For me, a simple ginger fermented a year can't be beat. That said, a commercial tepache I had was great too. I've just never pulled the trigger on the pineapple.

    I have made kombucha. My daughter who is a dental hygienist told me to be careful about the acid on my teeth. Have you heard about this being a problem? Next spring I want to try eating spruce tips. Thank you for the inspirational video and loving Christ! Bless you!

      While I am sure it is possible, it is really no different than consuming vinegar or wine and people do those all the time

    I started making kombucha and water kefir because its cheaper than store bought. I love them but unfortunately when I drink my home brews I get a very bad headache. This does not happen with the store bought.. I'm going to have to try it the way you make yours and see if I get a different out come. Going to check out your other videos on your starters.       Or a second ferment?
      DAILY
      I mix 1/3 keifer water, 1/3 Kombutcha and 1/3 of my herbal infusion for the day. This has helped me drink the bitter herbs.

    This looks a lot like how tepache is made 😊 It's my favorite beverage right now and just like this so easy to make!
    I'm curious what you like to do with your pineapple vinegar? I started some a little over a week ago and fingers crossed it turns out well ☺️

    I have tried both the water kefir and the ginger bug, but even with fresh ginger, I'm having problems getting it to ferment properly.
    I blame that partly on the fact that 2 years ago we has to buy a new manufactured home after hurricane Laura destroyed our old home. I never has problems getting things to ferment there, but I'm thinking the formaldehyde in the new one is causing problems, as well as it just being new? It also has central air which we never had before and even though I keep my ferments out of the drafts as best as I can, and we keep our air on 75 during the day, it may have something to do with it?
    Anyway, I am definitely going to try your raisin starter. I think because they are so naturally sweet I can get them to work better. I live that idea and now that I'm able to find some organic bulk raisins from Azure Standard, I'll be working on that.
    I have recently started making my own kombucha. I am the weird person that has always preferred tea over coffee. I am on my third batch and I like it plain as well as with a second ferment. I'm especially liking strawberry this summer. It is so much cheaper and since my husband likes sweet tea, I'm gradually getting him to drink this instead. Win, win!

    My mom used to use dried ginger (spice) to starr her ginger beer starter. If she found it being too sluggish she would add 2 to 4 raisins just to get it going.

    This looks amazing. My mother used to make fermented pine needle drink. She said it makes your blood clean. I would love to see the end product of your spruce drink (the stage where it's bubbling) next time.

      Yes, many have said the same thing. If you are not dechlorinating the water, it will prevent a good ferement

    Heidi, I was wondering if I could add orange juice to my spruce tips?
    I have cancer that I have been fighting successfully for 4+ years and need all the healthy healing foods as well as as many calories and protein that I can consume to keep my weight up. Any suggestions you have would be greatly appreciated!

      You can ferment any juice so yes, you can add it to the the spruce tips when fermenting instead of water if you want

    I’m not a tea drinker either. I’m a coffee drinker. But I only have one cup in the morning in order to maintain a healthy lifestyle. I’ve been looking for alternative, probiotic drinks. I have not had success with Kiefer P. With a B water or milky for migraines do not multiply they keep dying no matter how hard I try. Must be the milk I use bottled water I use spring water from the store. I do not use tapwater at all. I don’t drink my tapwater. All I do is use it to do laundry and wash dishes. And naturally bathe. I’m not too crazy about the ginger bug. I don’t like bottles exploding I’m afraid so hopefully this video will give me an alternative to healthy drink so I don’t have to drink only water and coffee throughout the day.

      I do drink a lot of hot herbal teas in the evening and coffee in the morning. Coffee does have its health benefits and can be used with various health ailments such as gout, but like anything, moderation is key.

    Great vlog & ideas; thanks for sharing! I don’t have much for organic fruit available but I will try with my apples this fall. Have you tried cucumbers? My daughter has a bumper harvest in her greenhouse.

    I make ginger beer the first time, and in some video, they used 2 cup of sugar, and I started with 1 cup, and slowly added 1 1/2 to eventually 2 cup of sugar on day three. and because of that, I bottled it. Afraid that it's out too long. Maybe I'll let it sit out for day 3 and 4th in the bottle. My question is, is 2 cup too much of sugar, or too sweet? I see that you only use a half cup for a half gallon. maybe i over sweetened it? thank you Heidi.

      If you are making only a half gallon, two cups may be a lot but if you are making a whole gallon, it may be fine

    You can easily dechlorinate and remove chloramine from water by adding ascorbic acid or sodium ascorbate powder. Both forms of Vitamin C powder!

      That is a new one but makes sense since chlorine is a base and Vitamin C is an acid so it would neutralize it but I do wonder if it would remove the chloramines

      @@RainCountryHomestead you’re right on the chloramines! Had a look back at the material on it. Either way, dechlorinating with either ascorbic acid or sodium ascorbate is super cheap, I bought a small bag and it will last for potentially years. The amounts required are tiny, 1g neutralises 1ppm per 100 gallons of water.
      Edit: Oops, nope it WAS right that ascorbic acid and sodium ascorbate neutralise both Chlorine AND Chloramines! Some sources online also ask whether Chloramines return after the Vitamin C degrades in water over a few days, no they will not as they have been reduced and then oxidised. (Editing this in case it helps someone)

    Hi Heidi. What options are there for making a probiotic if I don’t like fizzy drinks, and I’m lactose intolerant? My doc suggested an OTC probiotic for my terrible gut issues, but I want to make my own and get away from pharma.

      The only thing I can think of it drinks like these is to allow it to fully ferment to vinegar. Once it is vinegar, there are no bubbles at all. In which case you will want to dilute it down or drink straight in a small shot.

    I'm making kavas and rejuvalac at this moment because it's just to easy to make. I'm not sure about all that sugar.. I know they say it gets eaten up. Idk
    I would love the pine but it would be to sweet. I have herbs I'd like to turn into drinks but I'm not sure how.
    I'm fermenting lime right now but it mellows out the lime flavor to much.

      The longer you allow it to ferment, the more sugar it eats through and yes, it is true. Once you start doing it you will realize how true it is. Once the liquid becomes fizzy, taste it, see what you think, if it is too sweet, allow it to sit another day and try it again. What you will find is it will get less sweet each day meaning there is less sugar present but this will also mean there is more alcohol present.
