    Do these bevels have a convex grind, or are they flat?

    I have two Takedas. I need to touch up them soon. Means chosera3k, kitayama and after that on my shirosuita aka renge. I don't own nagura stones, which I think helped you a lot deburring. So what would be the best to stop a Takeda on a stone? I think about a very light edge leading stropping motion at maybe 1 or 2 degrees higher angle. Only the weight of the knife. Do you think that would work? Or do you have a better way to do it?

    A bit unrelated, but I recently bought a Takumi Ikeda knife which is 50/50 bevel, but the factory edge was sharpened with higher angle on the left side and lower angle on the right side. Is this what you call microbevel or this is 70/30 sharpening which it doesn't make sense if the knife is 50/50 bevel. So can you actually sharpen both sides on different angle on 50/50 grind or you have to re-grind the whole bevel and how would this effect the knife performance overall ?

      Hey, good question! If it's a small difference in height, it should effect the performance. Generally there will be slight differences in the two bevels on most hand sharpened knives. Folks in Takefu really only sharpen 50/50, so it wouldn't have been done differently intentionally. You can sharpen both sides 50/50 in future, but you could always spend more time on the shorter side if you wanted to balance them out.

      It was a long time ago, but Naoto thinks it may have been a naniwa Hayabusa we got as a sample!
