“Just stop” is good life advice for many things…not only mandoline use.😊. I don’t know if you have done a video on donabe cooking. Might be interesting.
I think mandolins are good if you're elderly/have issues handling knives. Imo becoming proficient with knife handling and maintenance is almost always the best option. Mandolins, garlic crushers, peelers etc. all feel unecessary.
Love my Mandolin but I where cut resistant gloves even when I'm using the holder. On occasion I have worn nitrile gloves over top of the cut resistant gloves especially when doing things like beets (staining) garlic and onions (smell)
I bought one of these (well some other brand) specifically for julienne ginger. That proved quite challenging... and bloody heh. I've been trying to figure out if the mandolin I bought just sucks, or if I'm asking more than it can handle. Thoughts?
Sage advice - buy a sharp one. I used to have a cheapie and hardly used it as it just didn’t feel safe. Got a Benriner a few months ago and it’s so much better, making kraut has got super easy. Still don’t like the julienne blades though so might look into a Chiba.
I had V cut one and it never worked proper, always thought I was doing something wrong but then I got a Benriner, even got my Amazon account suspended over it but it was totally worth it. Totally worth losing that account.

Yikes! Ginger is quite dense, but a sharp one should still do it. If it can cut a carrot with relative ease, I'd say it's a decent one.

The Chiba julienne blades are insane, crazy sharp. The first time I used one it nicked my palm, be careful!
Also, I was using a 7$ mandolin from Walmart. LEASON LEARNED🤣

Ive hurt myself with box graters more then mandolins yoy pay attention to a mandolin box graters or peelers are just so harmless looking
