These guys have a wonderful and positive philosophy and are amazing charitable people. Just found this channel, but I know their reputation. These recipes clearly match that goodness. Brilliant and ludicrously delicious looking. On the subject of interpretation, I’ve always thought that was a big feature of mexican food is that everyone has a different way of doing it (each one of them being the best way) and that’s sort of ingrained in the spirit of what are essentially simple templates to work from.

I made this and IT WAS AMAZING!!!!! I loved everything about it, especially how easy it was. I bought a tortilla press just to make fresh corn tortillas too and it was well worth it. The only thing I didn't do exactly is the salsa because my cucumber went bad but I managed with a jar of salsa boosted with fresh ingredients. It was so fun to make and I'm planning on making it again next week! I would love to see other taco variations. Muchos gracias!!!

I worked in san diego for years, just near the mexican border....never mayo, always sourcream, only seasonings for gauc is salt and fresh lime juice, avacado mashed before adding other ingredients. Seasoned Temph is a great idea, will try this

I absolutely love this recipe (which I read in the comments also appreciated by the Mexicans).I think that the tempeh improves the consistencies so that it looks very similar to the classic recipe. I learned a lot about the use of spices from you. My recipes taste better.
Is that blue corn masa? I’ve lived along the border and in mexico most of my life (I’m probably as old as both of you combined, so for a while!). That’s quite rare to see except in some fancy restaurant in the US, Usually just the white or yellow corn masa. Tortillas are heavily subsidized in Mexico so they (the government) wouldn’t spring for the more expensive blue corn. Great video. And for those that questioned the cucumber in the salsa, I’ve seen that many times in Mexico. I’ve actually seen salsas there made with most everything. Even insects. Just depends on what’s available locally with wide regional differences.
I always tended to put a bit of plain flour in with my corn masa, found it made it a LOT easier to roll and deal with, plain masa breaks apart really easy when you don't have a taco press. =(

I suppose you can pop that upside down muffin pan in the oven and crisp the "tortilla" into a "taco". Love the muffin pan idea! BTW guys, although your accent is adorable, it is pronounced 'taco', as in 'tata'. At least in Texas it is!🥰
It's a tortilla press & you make tortillas... it isn't a taco 'til you fill it. Delicious recipe, but definitely would add a pepper to the salsa & omit the cucumber.

I think they are called tortillas, not tacos. In Mexico, the tortillas are very cheap, made of corn, and are delicious when fresh. Tacos which are sold in the street for the most part, are tortillas filled with meats usually, with side dishes of onions, cabbage, guacamole, and several salsas. I have never before heard tortillas called tacos.

Vegan Quarn
Freeze your firm tofu then thaw it and prepare. If you freeze and thaw multiple times the texture becomes even meatier.
