    You are right . I have heard that some butchers if they have old meat add marinade with spices etc..Just to sell it.But I don't buy that I like just getting plain and do my own thing.I like how you explain it...

    Even without the "value add" it's a brutal racket and people are being soaked. Anyone in the know, knows they "prepare" the old, nasty meat...as "ready to eat" or "ready to cook"... then they have the nerve to charge more for it... . More people need to learn how to break down a side of Ontario hog themselves.... People need to educate themselves when it comes to food. To many have become too used to being "fed" by someone who's selling something.
