Traveling to Italy and RUclips has immensely improved my cooking. Instead cooking ramen or scrambled eggs for a quick meal, it's carbonara, pomodoro, pesto. Homemade. Super simple. Healthy.
love it. I never have done it with Asparagus....makes me feel like I have a LOT of fun experimenting to do....not just with Asparagus lol. There will always be classic favorites, but its nice to know its impossible to get bored with food these days. Cheers All!
Love it - just wish the local Jamie’s Italian in Bath hasn’t closed earlier this year. I went pretty often, it was always busy it seemed to me and the food was amazing, the service was spot on and I felt the price was very reasonable. Don’t care this doesn’t use pork cheek and uses belly pork instead, if you’re a “proper” Italian, get over it - we’ve seen what you’ve done to the humble British Sunday roast! Keep going Jamie.
When i saw once in this channel Antonio Carluccio make carbonara (the original) i've obsessed with the dish since. Found out that if bacon rushes (i can't find smoked pancheta here) are used should be oven baked and the flavour is more intense . Also, instead of parmesan cheese i use grana padano

Damn it!!! I made the mistake of reading the comments section on a JO pasta recipe - where keyboard warriors think they know better than a chef with 30yrs experience, who's trained at the River Café and other Italian Chefs, and has toured Italy EXTENSIVELY for 20yrs...
Mad lad that I am, I use parma ham in my "carbonora". 3 eggs, a table spoon of creme fraice, a little pasta water, and Parmesan cheese. Not authentic, but it tastes great
It’s very hard to find guanciale in the US. Some Italian delis don’t even know what it is That’s why a lot of Italian American food is quite different than what is available in the homeland.

Something for North American viewers to remember: we're in the habit of refrigerating our eggs, and it's exposure to temperature extremes that causes eggs to curdle into a dry scramble. So you may want to "temper" the egg mixture by stirring in a little of the hot pasta water after you add the cheese.

I am newly pregnant and since I saw that post on instagram, I couldn't think of anything else. So I tried to make that dish myself, but it didn't turn out like it was supposed to. I would love to go in to one of Jamie's restaurants, but we don't have them in Germany 😰
