The buffalo skin we called them "anit" in the Philippines. I lived in the province so every fiesta we slaughtered a buffalo. We don't mix it into a soup,after the hammering process we just eat it and dipped it into our local vinegar. It's very hard to eat though,it's tough and chewy. But when your hungry you have no choice.
I'm from Northeastern part of India Belongs to Mongoloid race. Even We did the same After burning we pound with Hammer or Big Knife and we too just chew like that 😂😂😂 and sometimes we make Chutney also.
Though I'm a Vietnamese, this is the first time I've heard about this ethnic group and their unique culture and cuisine. Thank Sonny for letting me know more about my country's ethnic minorities. Keep making these videos coz they're very interesting. I will always support you.

This is AWESOME. Eye opening for not only foodie but those that thought they knew all there is to know about food in Vietnam. I've had buffalo meat when I was in VN from 2002 - 2012 but the other dishes are so special. I've said it before and I'll say it again, Sonny brings to light so many unique dishes about Vietnam, in their unique cultural setting, and the people doing it are wonderful.
Da Lat was my all time favorite in Vietnam, I miss it! It's been what? Only a month and a half since I left Da Lat, and I would absolutely return there. What hotel you're staying at?

This show has really opened my eyes. I’m so tired of cooking with the same 3 seasonings - Onion powder, garlic powder and all seasoning lol. There are so many herbs and spices out there!! I just don’t where where to start with my southern American pallet lol.

I have seen similar preparation with Norwegian stockfish. They hang it and freezedry it. It is hard salty and inedible. You must beat it and soak it for a long time.

Wow! Rice tamales, minnow jam, novel drinking techniques, buffalo on a stick, and using a hammer in cooking, plus a lot of open flame. What more can anyone ask? I might have asked more questions, such as: "Why are you using a tall skinny pot? Nobody else in the world has this as far as I know, how did it get started? Can you put a bunch of them in one fire? ", this video might have raised more questions than it answered! Three "dang!"s. I still think your channel will eventually have a compilation: Best of cooking with blowtorch and open flame.
Thanks for the feedback. I did ask that question about the pot’s shape. Sometimes when I get answers that don’t seem like they quite add up I just don’t include it. They had said it’s because they can get hotter faster but that still doesn’t seem right.
