    I really enjoy seeing Gennaro working in his natural habitat, which is the kitchen of a busy real restaurant kitchen. That's so genuine! I also appreciate that Gennaro doesn't waste any time at all, he just does the minimum thing to arrive at the maximum effect. Gennaro is one of the most efficient RUclips cooks I know.

    Excellent technique with the making of the fish, use parchment paper as heat semiconductor without the skin of the fish take direct heat is a great tip for a beautiful result. Revenue easy to do and with all the care and affection that only you have Gennaro! Thank you for sharing!

    Always love Gennaro style of cooking which full of love and free from cursing. His palate is in his fingers. Very experienced chef. Love his expression: "why I am so good"

      HUGE difference. First time I tried it thought it as an aberration. I was wrong. Again. Try it in a grill pan or any pan for that matter. No oil on paper, only on fish.

      You can basically use any kind of fish and even a fillet of a fish for this dish. A whole fish looks better but you can use whatever you have. He basically gave the base idea of making the dish, but you can make allot of variations by using other fishes and even a crispy fillet of a fish would work.

    Why does Gennero say everything plural? He says "Lemons" instead of "Lemon", he says "Parmesans" instead of "Parmesan", he says "Peppers" instead of "Pepper".
    He uses the plural form of all words, when they are supposed to be used singular.
