Sausage & Lentil Soup (From Carrabba's)

  • No Copycat! Enjoy this delicious Sausage and Lentil Soup from Carrabba’s. Hearty AND healthy!
    Ingredients:
    1 Tbs. Olive Oil
    1 Pound Italian Sausage
    1 Carrot Diced
    2 Stalks Celery Diced
    1 Large Onion Chopped
    2 Cloves Garlic Crushed
    8 Cups Chicken Broth ( 2-quarts or 2 standard 1 quart boxes ) * One extra reserve quart of broth if more liquid soup is desired .*
    2 Cans Whole Tomatoes Diced ( 2-14.5 oz cans or 1-28 oz can
    2 Cups Dried Lentils Washed
    1 tsp. Salt
    3/4 tsp. Black Pepper
    1/2 tsp Crushed Red Pepper Flakes
    1/2 tsp Oregano
    1/2 tsp Thyme
    1/2 tsp Fennel Seeds (heaping)
    1 Bay Leaf
    Directions:
    In a large stockpot/soup pot heat one tablespoon of oil.
    Add diced carrot, diced celery, chopped onion and crushed garlic.
    Saute until tender.
    Remove vegetables from the pot.
    Remove casings from Italian sausage if necessary and add sausage to pot.
    Brown and chop up small. Drain fat if necessary.
    Add sautéed vegetables back to pot with sausage and add in the chicken broth.
    Add in diced tomatoes with their juice.
    Add in dried/washed lentils.
    Season with salt, pepper, red pepper flakes, oregano, thyme, fennel seeds and bay leaf.
    Simmer until the lentils are tender, 30-45 minutes.
    (OPTIONAL)
    Remove approximately 1/3 of soup to a bowl and puree using hand held blender.
    Return soup to pot.
    Adjust seasonings as necessary and remove bay leaf.
    ** If soup is thicker than you like, add additional chicken stock until desired consistency is achieved. Water May be used in a pinch.

    Thanks Cindy! I made this today for my family. They absolutely love Carabbass’s sausage and lentil soup. They were blown away by your version. They said they couldn’t tell the difference. Definitely found a keeper!

    I moved to a state that doesn't have a Carrabas and I've been craving like crazy for this soup. I have to tell you Ms. Cindy that

      We have moved a lot over the years and inevitably you find “favorites” you end up having to leave behind . Sometimes it’s those little things in life like a favorite song, a smell that transports you or a favorite food that brings a certain level of comfort. Your comment makes me super happy . I’ve tried over the years of compiling my “comfort food” that now I’m trying to share! I’m SO happy you enjoyed the recipe ! I also did a video Carrabba’s chicken soup you might enjoy also.     I like to parboil the lentils first just to get rid of the black stuff. It may loose some nutrition but it has a cleaner taste.

      Black stuff?? Maybe a different brand of lentils is in order??🤨🤔 I’ve never had “black stuff” but I do wash them per the bag directions !

      OH NO!!!😩..I definitely know how you feel ! Many places we lived during military life made it difficult to find A LOT of things . When you like to cook, it’s definitely a downer. Plus if you need something because you want to make it THAT DAY.. it takes the wind out of your sails to order it. If a recipe really peaked my interest, I would definitely order the spice(s) if I couldn’t find them . Didn’t have Amazon back then but they do come in handy now should you have an Amazon account . Another company I like to use is called, WHOLE SPICE. Eventually, I’ve grown my spice collection and I’ve been known to drive a distance for “ things” 😇😇. I’m sorry you are having this experience . Depending on the recipe, I might be able to recommend a more common substitution or a deletion that you could get away with. However, some recipes I gotta say… if you don’t have that ONE spice.. you either order it or go onto a different recipe! Feel free to ask!!

    I just made this soup and it is delicious - I am adding it to my collection of recipes to make again!
    However, while the soup is very good, I'm not sure it is the exact recipe Carrabba's uses. For one, they use spicy sausage (I used spicy sausage just now, making this recipe - it does taste very close, if not the same, but I'm not completely convinced). The description of this video starts with "No copycat!" Are you implying this is the actual, genuine recipe Carrabba's uses (aside from the small changes you clearly made - like not using spicy sausage, of course), or are you saying this is your version, or something like that?
    ... Italian has one "L", BTW 😁. - Referring to your second ingredient "1 Pound Itallian Sausage".
    I started with 10 Cups of broth and added another 4 cups 1/2 way through cooking and it came out pretty thick and hearty without processing any in the blender - I had a very big carrot and onion and I used 3 cloves of garlic.
    Also, when cooking something like this, I was trained that it is always best to cook the sausage first. When the sausage/meat is done, remove it from the pan and use its' drippings to sauté the veg and onions. Only add additional olive (or Veg) oil as needed. This reduces the amount olive/veg oil you will use and increases the flavor profile (you are not pouring it out).
    Never mind my nit-picking! - It is a very good recipe.
    I am genuinely interested to know the origin of this recipe, though - is it Carrabba's actual recipe or is it something else?

      Hi! I’m very happy you enjoyed it, and I’m very happy to find a nit picky person like myself !!🤣. That’s how I picked the name for my channel .. because I will only put recipes out that I and lots of other people like that have been around a while ( time tested.)
      So back in 2010 I used to have a neighbor that never cooked . She only went out to eat everyday! Her favorite place is Carrabba’s. I would go with her from time to time . I really enjoyed their soups and she knew I liked to cook!
      She says .. “ oh I dated the chef!” Lol!! Well my eyes lit up as I politely asked for recipes ! When I acquired the lentil soup recipe and I made it at home it was WAY too hot ( spicey). So I asked my friend to mention this to her chef friend . He came back with Carrabba’s has their own provider of sausage , that if mine was too spicey to use a good Italian sausage ( which has good spices) with the red pepper flakes and see what I think, because he said everyone’s hot/spicey sausage can vary widely. He said , this way you can adjust the heat with the red pepper flake, rather than using a sausage that’s not the exact brand . So to answer your question .. this IS the Carrabba’s recipe ! The method in which I cook it was also how he said to do it😉.
      I very much hope you and everyone enjoys it, cause I think great recipes should be shared!
      Btw.. thank you SOO much for pointing out my double ll! A lot of work goes into these little videos and typos happen from time to time !! Feel free to adjust this recipe to your taste as I tell anybody .

      That makes sense! I was just telling my wife, I'm sure the difference is the sausage - everything else seems pretty right on point. I used Jimmy Dean's Hot sausage - I can find better for next time. Carrabba's is definitely more greasy than the Jimmy Dean's I used, which would certainly add to the flavor profile. I can imagine if I had the exact same sausage Carrabba's uses this would be the exact same soup.
      I love finding genuine recipes for good dishes - I'm very happy this video came up in my search for this recipe! With prices on everything going as high as they are, I would rather make the dishes myself, and if I can get their recipe, then what do I need them for?!?! 😊
      Right now, at my local Carrabba's this soup sells for just under $8.00/cup after taxes! I think I spent about $20.00 on ingredients (more than it should have cost!) and made a huge pot of soup - enough such that I would have spent over $130.00 if I bought that much from Carrabba's!

      BTW, I have no doubt Carrabba's makes the mistake of cooking the veg before the meat, wasting all that flavor!! 😋

      @@AC-ds7fh yes I believe the sausage variety makes huge difference . In the video I use an Italian sausage from Costco . But there too I have been to different Costcos in different states and that is different too🫤.. I gotta say too I’ve never had a greasy bowl of soup from Carrabba’s. Maybe they are using lesser quality products as many restaurants started doing post pandemic 😑. I haven’t been to a Carrabbas now in several years because I no longer live by one. Sooo glad I have the recipes for that reason ! I think they have great food ! I have to tell you also that restaurant’s can very dramatically town to town, state to state . Some favorite is great at one spot and the next is 😖.. now you have TOTAL CONTROL!! ENJOY!
