The last defensive player to do it was Lawrence Taylor in 1986. Though, in the NFL's defense, kicker Mark Moseley won the MVP Award for the strike-shortened 1982 season, so there is proof that the NFL does (or at least did, pre-Ginger Hammer) consider all positions for the award.

I would argue that the biggest bias is in stats. What I mean is that QBs usually have the most influential or noteworthy stats in any given game. Then RB's and then WR's. For that reason, it's exceedingly difficult for a defensive player to win because tackles, pressures, and pass defenses are less important stats to a spectator than completion percentage, qbr, or yardage. Turnovers are the only trump card defensive players get and that's not necessarily indicative of whether a player is playing their position well, a turnover can be a matter of right place/ right time.
The biggest bias is conference and/or size of school, Jaret Patterson of the University of Buffalo who has the second most rushing yards in a single game in college football history, as well as the most touchdowns in a single game in college football history. He was in the top 5 for rushing yards this season while still playing only half the games. He didn't even get Heisman Recognition.
Chase Young immediately came to mind for me. Dominant player in college, likely to go in the top 3 in the NFL draft, and yet finished fourth in Heisman voting behind 3 QB's.

For the position basis of this argument you could definitely replace "Heisman" with "NFL MVP" and it would make sense. Had to tell my Titans friend to not get his hopes up for a Henry MVP because of this. I think both leagues should have position specific awards for this reason, maybe grouped like QB, skill position(RB, WR, or TE), OL, DL, LB, DB, Specialist.
