You can make more videos by categorizing by type, like power ups, enemies, etc, and limiting length by only counting things that appeared at least twice. That can be capped off by a video about stuff that only appeared once.

The "Moo Fish" is almost certainly a reference to the real life sea cow, another name for a manatee, which may be one of the major contributors to the legend of the mermaid. It's nice to see a more literal sea cow.
For nsmb2, one level I find really unique is 2-2 because I like the unique, tower like platforms that are only in that level. I also like 3-gh for it's unique ghost walls that are only in that level. There's also 6-5 for its unique ghostly aesthetic.
By far the most unique level in SM64 is Big Boo's Haunt as it's the only one asides from the courtyard that has Boos, is very different to other levels design wise (the sky for example) and even has not one, but two unique music tracks. I honestly can't think of any level more unique than that one in SM64
For Mario 3 how could you forget 5-3? It's the only level not just in the game but in the entire series to feature Kuribo's shoe the sock with the winding key that Mario hops around in.
What about 5-1 in Mario 1? It is the only X-1 level which has a small castle (instead of a large castle) at the beginning (besides 1-1, which doesn't have ANY castle at the beginning)!

I'm kinda surprised you didn't include Trick Trap Tower from 3D World; it's a blast collecting the Key Coins from inside the tower and having to quickly get back out avoiding the poisonous fog!

I think the castle in World 7 in SMB3 needs a mention. I was stuck on that so long as a kid. I had no idea there was a door on the ceiling and you also had to enter the room when there are no enemies in there.
That thing about 5-2 being a celebration of Zelda's 25th anniversary sounds like it was made up after the fact. Like they made the level in its entirety, somebody said "Hey, this kinda reminds me of a Zelda dungeon", and some big brain decided to roll with it despite all the levels for world 2 already being made and balanced for the early game.
In nsmb2 one of the secret words has a level that was entirely made of blocks. You could destroy a lot of the terrain and it was pretty cool. The cannon levels in that game were also really cool. You would get in the cannon but then had to to survive and non stop run to the end of the level.
For Galaxy 2 you can also say the flip switch galaxy since it used platforms that changed when Mario spins or beat box galaxy where the platforms changed with the beat of the music.
I think the most unique level in Super Mario Bros. is World 4-1. You can hold down the run button and basically just play it like a rhythm game. You never need to stop or slow down or turn around. You can clear the piranha plants without waiting for them, just barely. You just need to keep running. It's my favorite level in the game.
All Stars wasn't the first time thejapanese SMB2 was released internationally. Before that, there was the DX port of SMB for the GBC which includes the levels of SMB2 as "SMB for Super Players"

11:12 is not an auto-scroller. Auto-scrollers prevent you from moving ahead as well which is why they are so notoriously bad for many play styles. This level doesn't do that at all making it by definition not an auto-scroller and a far better level. Calling it an auto-scroller is a total insult. A scrolling obstacle to avoid is very different than in auto-scrolling level. Another case of this is the poison fog in the New Super Mario Bros Series.
