  • In this blood sugar test Dennis Pollock and his wife Benedicta test the blood sugar-spiking properties of Ezekiel Bread as compared with white bread. Nearly everyone agrees that whole-grain bread is healthier for you than white bread. But what about their tendency to raise glucose levels? Is there that much of an advantage of whole wheat bread over white bread. In this video the mystery will be revealed.

I think the benefits of Ezekiel bread go far beyond the glycemic index. EB doesn't make you feel tired, it's a more complete food and it will help your digestion instead of be-fouling it as most wheat bread will do.

I did some math and the difference is still pretty impressive if you ask me. I took the starting level (pre-meal) minus the 2 hour level: His wife was only up by 12 with the EZ bread vs up by 19 with the white bread. The Husband was up 27 with the EZ bread vs UP BY 55 with the White bread at the 2 hour mark. Seems that EZ bread is a much better choice. Not to mention it has fiber and it keeps you full longer!

It would be interesting to see if the results would change at all if you weighed both breads on the food scale to make them exactly the same, and then measured the results based on that. Something I would be interested in seeing for future videos.

Using Blue Bassett’s figures above, by my calculation the white bread is only 82% of the weight of the Ezekiel bread though, so could the almost 20% more portion have been considered in how much it spiked your blood sugar? Seems to me the white bread spiked your blood sugar 20% more than the Ezekiel bread and kept it elevated at two hours much more than 20%. Ezekiel bread is much tastier than white bread in my opinion if it is toasted. Given the option I will always choose Ezekiel bread over white bread but then again, I always toast it.

What you have determined about 'spikes' may be true, however, I believe the true benefit of eating the Ezekiel bread over the white bread is that after consumption the ingredients used for
the Ezekiel bread is in better harmony with your body's healthy maintenance and is not as harmful for most, as many of the ingredients used in the majority of white breads. Ingredients such as: fillers, food colorings, sugars, emulsifiers, corn sweeteners, various gmo's, preservatives and etc.). Look at the ingredients listed and notice, very little that is listed there is found naturally in nature. These poisons can be added more cheaply than giving you the quality from using naturally healthier ingredients. In this sense of better maintenance, I would say, you only get what you are willing to pay for. I favor the Ezekiel bread.

I've got a lot to learn about blood sugar and all (I will soon since I have family history of diabetes and related issues). From what I've learned over the past 15 years from the bodybuilders and nutrition experts, the reason they suggest it is because it tends to have higher protein than regular bread and also easier for your body to break it down.

@@MrKaycleans4uThe Ezekiel Bread brand used in this video is not made with milled flour, but rather made from sprouted grains, so don't use the mill until after you've sprouted them into baby plants then dried them then milled them. The prophet Ezekiel did not do the sprouting thing, though. It is Food for Life's personified take on the scripture. So, if your mill the grain itself, you will be mimicking the prophet, not the product these folks are eating.
The sprouting then drying thing is the same as in the producing of barley malt. Barley is sprouted, dried, milled then the powder is used in pretzels, bagels, & other foods for their very distinctive flavors.

My Organic Acids Test showed that I have high oxalates. As much as I love almond flour it is very high in oxalates. They aren't just a problem for kidney stones. I prefer one slice of Ezekiel bread or authentic sour dough bread with a couple of almonds on the side than daily subjecting myself to so many oxalates by eating bread made out of almonds. Those people drinking the green smoothies and eating daily spinach salads are in oxalate overload too.

@@lorimav Thanks for making me aware of that! I wouldn't want to eat almond bread either. I don't even particularly care for almond milk either. Only if there wasn't my lactose-free milk available, but I would rather choose rice milk, over almond milk, anyday!!
Coconut milk is not bad to use, in the place of milk too.
I also agree with you about your choice of breads. I like real whole grain bread, like Ezekiel 4:9, but if it's gonna be white bread at all, then let it be good quality sour dough, or farmstyle bread, (sliced french bread), or shepherder's bread.
Not the regular, cheap, squishy white bread, that was popular when we were growing up. (Wonder bread, or Webber's bread).
Oh, and I also agree with you about eating the almonds on the side, I LOVE almonds as a snack, or in rocky road icecream, or in granola bars, but they have no place in bread.
I used to buy Vogel brand bread years ago, very good quality bread, and they put soy beans in the flour, to add protein to the bread, and it's true, because I'd be more full eating two slices of Vogel bread, than other breads.

Firstly, thanks for sharing this experiment with us. I like white bread a lot more than Ezekiel Bread or any of the other less processed breads. However, there's so much more to the story than just glycemic response. Ezekiel Bread has no ultra-processed seed oils in it. These types of oils cause inflammation that leads to serious diseases. Also, his blood sugar was between 148-156 for an hour and a half with the white bread, while 123-149 with the Ezekiel Bread. It appears Ezekiel Bread would be the better choice in the long run. Regardless, for me, it's best to stay away from all grains.
