    I agree, hot pack beef is a great way to pressure can. I like raw pack for chicken though. Your cutting board inside a cookie sheet is such a smart idea! Thanks for the video!

    My mom would cold pack the jars and put a small garlic clove in it. It was always so good

    LeAnn, nice apron! I don't know why but for 50 years I have always prefered cold packing beef, pork and chicken. But nicely done young lady. I agree you are an asset! Thank you

    Having canned beef on my pantry shelf is a favorite. I have always done raw packed. But I may try hot packing after seeing how beautiful your jars turned out.

    I've used up all my canned beef, so I'm needing to get it in bulk as you had. Oh and I love how you used the oven to cook the meat first. That will save me time standing over a pan. I'm totally going to start doing that with my meats!

    Beautiful canned meat LeAnn. I used my last jar of ground beef tonight to make Tacos. I have a lot of canning to do as soon as I recoup from my back surgery. Lets all make 2023 a great year.

    I love the idea of the cutting board on a cookie sheet; genius! I use the same Presto guide to can meat.; very handy. Love your sense of humor,

    I love canned meat. I learned how to can last year so I could have shelf stable meat. I usually raw pack unless I am making a recipe like Mississippi Pot Roast.
    I made some Mississippi Pot Roast a year ago. We just opened it and the dill flavor had infused into the meat. It was so good. I used whole pepperoncini so it wasn’t too spicy. It was perfect for me. I think it was pork roast.
    I am enjoying your videos. I also saw a loaf of homemade bread and I think I saw your canned applesauce on the counter. You are an inspiration!! Have a blessed day!

    A little tip I learned from Sutton Daze channel - hold a canning lid behind the vent and you can see how strong the steam is. Great video and the meat looked amazing. Thank you.

    Thank you! I actually learned something. I was putting the weight on too soon. I was not waiting for that super fast solid stream the video definitely assisted me with that. And pushing down the meat was extremely helpful. I always thought I had to have space between the meat in order for it to get cooked properly for canning. So thank you I will be saving this for the next time I can beef

    I do mine @375 for 20”. I also use a commercial powdered beef broth with little additives. Just did 11 turkeys, came out beautifully

      I prefer hot pack over raw pack for most meat but for some reason, I haven't tried hot pack pork yet.

    Gotta love an All-American Canne … they just keep working! Thanks for the lesson! I’d be curious if you find that hot packing meats tends to make it any more or less tender than raw pack?? So far I’ve only ever raw packed ‘ugly chicken’ and while it’s certainly easy enough, I’ve been curious what differences there may be in the end product.

      I think both methods are tender. Its been awhile since I have used a jar of raw pack chicken. I love the tenderness of baked chicken before packing into jars.

    Your beef looks really pretty in the jars! Did you add salt to the jars at all? I have canned beef, pork, venison, chicken, and turkey. I do hot packs, too.

    Question regarding cleaning those jars after using the beef, I end up with stubborn sediment that is difficult to clean--what is your method for cleaning jars that had meats? I also have this problem with my potato jars leaving a ring where the liquid sat.
    Last question: what do you do with cracked jars? Even the smallest of cracks have been happening and I hate to throw out quart jars if I can use them for something else, ideas? Thanks for your wonderful variety of videos, such a great inspiration!

      I have a jar brush that I use for cleaning that I love. I find that brush at a Mennonite dry good store. I use the cracked jars for storing food in like herbs that I grew myself.

    I've only ever done raw pack for beef, does hot pack beef stay together a bit better when you take it out of the jar? I know with raw back it usually turns to shreds when I heat it up and stir it.

      We raise our own steers for food but I buy chicken and pork in bulk at the mennonite market.

      I can about 40 jars and it will keep for 2 years but I use it up before then

    Cold pack (ugly) meat is, admittedly, easier, but I prefer hot pack. I also add the juices from the pan back to whatever liquid I'm using to fill the jars. Adds a lil more flavor and no waste.
