Turkey and Spinach Stir Fry

    *Ingredients:*
    - 1 lb (450 g) ground turkey
    - 6 cups fresh spinach
    - 2 bell peppers, sliced
    - 1 large onion, sliced
    - 3 cloves garlic, minced
    - 2 tbsp olive oil
    - 2 cups cooked brown rice
    - Salt and pepper to taste
    *Instructions:*
    1. **Prepare Ingredients**: Slice the bell peppers and onion. Mince the garlic. Set aside.
    2. **Cook Brown Rice**: Prepare brown rice according to package instructions.
    3. **Sauté Onions and Garlic**: Heat olive oil in a large pan or wok over medium heat. Add the sliced onions and minced garlic, and sauté until the onions are translucent and fragrant, about 3-4 minutes.
    4. **Cook Ground Turkey**: Add the ground turkey to the pan and cook until browned, breaking it apart with a spatula, about 6-8 minutes.
    5. **Add Bell Peppers**: Stir in the sliced bell peppers and cook until tender, about 5-7 minutes.
    6. **Add Spinach**: Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
    7. **Serve**: Serve the turkey and spinach stir-fry over a bed of cooked brown rice.
