My dad made this every year at Christmas my whole life. He got the recipe from his dad who made it at Christmas also, and still had his dad's recipe card, which just named the recipe as "Irish potato candy". But it does use one boiled potato. It's great.

You might like it! *flourless peanut butter cookies* INGREDIENTS 1 cup peanut butter (can use homemade) 1 cup granulated sugar 1 large egg, lightly beaten 1 teaspoon pure vanilla extract Sea Salt for sprinkling INSTRUCTIONS Preheat oven to 350 degrees F. Line a baking sheet with parchment. In a medium bowl, mix together peanut butter, sugar, and vanilla. Then add beaten egg. Mix until fully combined. Using a small ice cream scoop, scoop dough onto prepared baking sheet. Using a fork, press down lightly into each cookie to make crosshatch patterns, but do not flatten the cookie too much. Sprinkle with sea salt. Bake until slightly golden brown, cracked, and still soft to the touch, 10-12 minutes. Do not overbake. Cool completely on pan. May be stored at room temperature for up to 5 days, or frozen, wrapped in parchment and foil and placed in a zipper bag for up to 3 months. Thaw at room temperature for about an hour. Total Time: 27 mins NOTES: Recipe adapted from Claire Robinson

I make this all the time and it’s super sweet but so good. Tip: when you have the log made place in refrigerator for about 30 mins the you can slice it up. I’ve used crunchy peanut butter and the creamy kind. Both are so delicious.

Mix them together, roll out the dough, slather on peanut butter, and roll it back up and refrigerate. However, I was looking at recipes online and it seems like the raw egg bit has been removed for safety reasons (understandably so). But that's how my mom used to make it. People loved it, but it was too rich and definitely cavity inducing.

Potato Peanut Butter Candy is a Christmas staple in our family! Passed down from my Dad's side from WV. We use real cooked potato, never thought about instant! Fridge will firm it up. Great job!!
My mum was Hungarian and there was a similar recipe at Christmas for mice shaped lolly type decorations wrapped in foil type paper on string. There was no peanut butter though. They were dried out though. They were hung as decorations on the Christmas tree.
Hey Mama, just some helpful tips, 1. You should've use ur flat stove top as a counter top ,it could scratch it or u could damage the heating elements on top,like ur burners..secondly when ur making any kind of dough,if it cracks when ur spreading it out or trying to roll it that means its most likely too dry..u gotta add more water or milk to it..not too much just enough to make the dough stock to itself,and this way when u flatten it out there should be no ripping/tearing, it should be one nice soild sheet no holes! Good luck on all ur future cooking endeavors !!❤
You could probably use Nutella instead of peanut butter for a chocolate hazelnut hit. I noticed the cookbook Momma was using. He’s another RUclipsr who tries out recipes from decades past and critiques them, so successful he’s written that book and I’ve seen it in bookstores here in Australia. I have never used instant mashed potato. I imagine it would be good for camping. If the stove top is the only space to follow out the product, whether this recipe or dough, perhaps Momma could buy a large cutting board about 60x40 cm to put on top of it or a pastry mat. It would make cleaning up easier. Although as a rule I would never put anything combustible or melts on a stove top. I suppose if Momma’s cooktop is induction it would be OK.

But you got to roll it out a little thinner.... And yes it is very sweet that's why you want it a little thinner because it's so rich ...... And we also did a version of this at Easter one year instead of using the peanut butter....you rolled your dough into little balls and made them look like little egg's and then put them in the fridge to chill then dip them and melted chocolate then they were chocolate Easter eggs 🥚🐣🥜🎄🐇

U can use regular potatoes 🥔 boil until done then peeled The bigger the potato the more sugar u need to make it thick
