I shop chop, prep veggies and prepare hummus twice a week. I always have frozen fruits and veggies available as well. All I need to do is combine various veggies (cooked & raw) , topped with organic berries for a huge rainbow salad topped with homemade hummus and some nuts/ seeds (flax, hemp). Dessert is organic plant protein blended with bananas if I want something sweet. I usually don't seek dessert because my meal is so satisfying... with color, textures and flavors. Totally worth the time to prep!
Having spent the whole of yesterday morning cooking, yes, it can take a long time but you can make dishes very simple too if need be, for example simplify your salads, or buy frozen veggies so they're already washed and chopped. Or buy tinned veggies/beans/lentils or dried tomatoes/veggies/mushrooms. In the autumn I eat a lot of chestnuts, very low in fat and a delicious source of starch
Tips: Don't buy tomato products in cans. There's no point in putting canned beans in soup. Dry beans are more affordable and are going to cook long in the soup anyhow.

After eating dried beans, I find I don't like canned beans anymore. I have them in my hurricane stash, but that's it.
