I was raised off neck bones as well. Neck bones, potatoes, onions, bell peppers, garlic all in one pot together, then we had hot water cornbread um um good

Mother used to take it when she got it falling off the bone she take it off the bone and she'd make a PAN of gravy and she put it Uber into the gravy wrap when the gravy was about done with some biscuits oh my God that's good you got to try make a homemade PAN of gravy and put that made Uber in just for a few minutes cause it's already cooked just let it stir in that garbage in 2 or 3 minutes it gives a gravy a little flavor get your hot biscuit oh my God it's good
You can cook lots of things with neck bones. Potatoes, sauerkraut, veg soup, all kinds of greens on the side. Serve with sweet potatoes. My grandfather use to slaughter a hog just like your grandfather. Are you sure they werent. neighbors?😀. So many things your parents cooked like them. Sometimes I wish I could get some good southern neck ones. These here in NY aren’t cut the same. Don’t know what part of the hog they get theirs from?😃😅

In north eastern Tennessee daddy would scald the pig and we kids would scrap the hair off. The 5 younger kids would be inside with momma. They would help put the meat up. But in the mean time momma would make a big pan of biscuits and fry up the sausage and some tenderloin while the olded 5 kids would be outside slaughtering the hog. We sure ate good after that hog was slaughter. Fresh meat never tasted better.

I'm so sick of eating pork where I'm living in a retirement home we are served pork twice a month it's flavorless no onions no garlic just salt and pepper. I use ketchup on it to bare the blan taste. My home cooking I'm to use of adding so much flsvor
Yuck I'm not crazy about pork. I ate so much onei was young. My husband's family put 20 to 50 onions in side the pig and put a spit through the hog and let it turn on the fire all night til nice and brown. I hated it

You can have the neck bones not for me I'd rather have a hrisvut cooked like you did those pig neck bones my dad are pickled pigs feet head cheese all makes me feel sick I tried to eat some of this pig but I guess it's not for me oh well I tried as a child just didn't like it even on the open fire with all those onions in it. Wasn't any flavor on the outside the onions were good but. I need some flavor on the meat id rather have ribs or something like that instead of cooking the whole thing flavorless yuck. Need some flavor injected in it while it was rotating. I have a meat injector you can fill it with garlic softened or soy injected any flavor you want not just cooked over wood and that's it maybe tub with masquete or horseradish flavor big time. Would be better i think
