I went looking for jarred butter beans for a Spanish recipe I wanted to try. While searching, I saw a can of SHELLY BEANS! I’d never heard of Shelly Beans until I started watching your channel. It’s so funny that I thought of you Tipper-a complete stranger- yet it warmed my heart! I just adore your channel 💕
Tipper, it’s always better when someone else cooks the meat, or anything really. It taste extra special because it’s Matt who takes the extra time to ensure that dear meat is cut just right. It all looked like a great meal! Y’all are eating like kings!!!
I commented once already, but wanted to say, I freeze leftover cornbread to use for making dressing. We like cornbread dressing year round, so instead of buying the boxed mixes like Stove-Top, I just crumble and freeze leftover cornbread, then pull it out, add butter, onion, celery, herbs and spices, and broth, then bake it. Or I'll toast the crumbled cornbread in butter as I saute onion and celery, then add herbs and broth for a top of the stove version.
My goodness this takes me back to my childhood days ! I’m 65 but vividly remember the hunting days of my daddy & brothers! Daddy would get so excited about hunting he was beside himself! We always had a big deep freezer full of all game & vegetables from daddy’s huge garden. He watered it with pump water & we always said it made it all better! ❤
In the weeks leading up to Thanksgiving my mother would freeze leftover cornbread and biscuits. So when she was ready to make cornbread dressing those 2 things were already done. Because I live alone I often have leftovers so I would freeze the cornbread so that next time I have a bowl of homemade soup I have some cornbread to crumble in it.
Everything y'all do just touches my heart ❤. Not only brings back some good memories but I always learn something new! It's been about 15 years since I had deer meat and even longer since I went hunting. The last time, I was 17 and my Daddy took me to a friend's land just north of Chattanooga. We both drew on a 4 point buck. Lots of family argued over which one got it(both shots hit, pretty close too). Daddy and I decided it was a win for each of us!! Less than 7 years later; he left this world. He did get to meet his first grandchild, my daughter ❤.
In case helps, I have some of those expensive glasses. They've lasted almost 7 years with few scratches. My eye dr told me a trick --not to touch them with any material when dry, even the microcloths, as they all push the dirt across the lens and leave micro scratches that add up over time. He suggested rinsing them under room temp water to get dust/dirt off, use a little mild soap to gently wipe off any oils and smears, rinse well, then pat, not wipe, dry with a soft cloth. It has extended the life of many of my glasses over the years and the new dr was surprised to learn how old my glasses are! So glad you found them in the woods!!
My son is a hunter and he does his venison the same way Mat does it. His meat never has a gamey taste, and he also makes deer sausage by mixing pork fat and seasonings with it and packing it in sausage casings and smokes it and it's delicious .
I was taken aback when you commented at the plate in you and Matt’s hands from the tomatoes to the deer was all harvested and hunted from your home anyone watching your videos seen the work and care that goes into that bounty! Bravo thank you
I like to put my cast iron pan in da oven when its cold, turn in up to 450 degrees, make my cornbread and when the oven is up to temp, pull da pan out and pour the batter in the hot pan. It gives the bottom a nice crunch when it done !! My favorite dessert is cornbread & buttermilk, but sweet milk is great also !!!!
Growing up in Georgia, my Grandmother made a loaf of cornbread (iron skillet) every work day. We ate it hot at lunch, ate it with buttermilk or sweet milk that night and the leftovers went to the chickens the next day. Great memories!

Matt is much like my son so I have a personal theory when it comes to taking care & preparing deer meat because being a perfectionist takes way more time and would be dreaded more. Their dedication reaps a tasty reward to those partaking in eating it. Well Done Matt.

I’d totally be down for roasted okra. My dad was a butcher with his own ranch and slaughterhouse here out west. We had a big walk-in cooler and freezer. I grew up around that environment. He processed game/deer for hunters too! Love when you show the outtakes at the end and the fast-forward kitchen clean-up.

I use leftover cornbread for breakfast. I put butter in a cast iron skillet, crumble the cornbread and crack a egg, stir around and add a hand full of shredded cheese. I do that alot, it's great!
Hey Tipper, Just wanted to say these videos about wild meat always reminds me of my dad shooting pheasants in the corn field! It was tasty! The only thing was my dad finding the pheasants in the corn field after he shot them . The family always said my mom made the best pheasant. I didn’t know that I would never see that again in my lifetime- but so happy I did. I often think my dad had to be a marksman to get those pheasants in one shot. But I will say my dad was also in the Marine Corps. And was a weapons instructor- my thought is - I’m sure like your dad started hunting as young children so of course would be expert in using a weapon. Thanks so Tipper for bringing those memories back . ❤❤& Prayers
5 star dinner, better than any restaurant! I’m a little sad, I went through the rest of my deer meat, and my hunter friend isn’t around anymore. Deer and Bison is our favorite meat. Try coriander on your roasted okra sometime, SO good! Vivian from a Chef’s life(also from North Carolina) is where I got the idea.
Yes, I freeze my cornbread. I save the piece I am going to eat, then I take the rest in slices and wrap them in plastic wrap and the tin foil. When I take it out of the freezer, I microwave it, and it taste like I just baked it. Try it sometime.
I do the same but I freeze it after it cools and then vacuum bag it. If I try to vacuum it before I freeze it, the machine will draw out all the air and I'll end up with a corn pancake. I break the seal when I take it out of the freezer, before it thaws, for the same reason.
I live alone so I freeze my leftover cornbread all the time. I simply cut in portions and put each in a snack or sandwich bag then but these in a gallon storage bag and put in freezer. Take out of the bag to reheat in microwave. Delish!
It’s just my husband and I at home now, so this is how we do our leftover cornbread, too. I put the plastic-wrapped and foiled cornbread triangles into a freezer bag, which keeps them all together. I used to just stick the individual wrapped wedges in the freezer, but they’d get separated and it was sometimes a bit hard to find some of them. When I heat the cornbread up in the microwave, I wrap them in paper towels and that keeps it from getting soggy on the bottom. I have also done “baptized” cornbread. I sprinkle the cornbread with a bit of water and heat them up in the oven. I also do that with leftover homemade biscuits, which keeps them from getting too dried out in the oven.

Oh my-fresh deer meat..wonderful. Deer is my favorite meat. On freezing cornbread-I freeze it and when I have a stash, I make chicken n dressing. It works great for dressing. During the holidays, it’s wonderful to have the cornbread done when cooking a lot.
Hey Tipper. I say okree too. Grew up saying it. I love them anyway you cook them. We had fresh field peas tonight right out of the garden. They were soooo good! And put 5 bags in the freezer. My peas & okree have done the best in my garden this year. I enjoyed the video tonight, especially seeing how Matt does deer meat. I’ve said it before, it’s been years since I’ve had deer and elk growing up in Colorado. I wasn’t crazy about it. BUT the way Matt cleans and seasons the meat, it looks so tender and tasty.

Try cornbread for breakfast instead of cereal with milk and sweetener and a little maple syrup on top. Sometimes with a sprinkle of cinnamon or sometimes with a little nutmeg. Also good with cream or vanilla ice cream. Yes, vanilla ice cream for breakfast. Who'se looking but you.

That’s a good looking meal! When you were speaking of leftover cornbread, my dad use to crumble some up in a glass poured buttermilk over it, with some black pepper. He truly enjoyed it that way! We grew up saying okrie also. I’ve also heard it pronounced “okrir”.

Okree vs Okray. I had a great-aunt from Ashe County. I always knew her as Alfee. It wasn't till she died that I learned her name was actually Alpha. It's that beautiful Appalachian dialect: a final "A" (or just a shwa) turns to "EE". "Virginia" turns into "Virginiee", for instance. I love this channel so much!

Y’all starve me to death watching y’all cook those wonderful & healthy meals. Being a senior citizen & living alone now, I do fast food or Lean Cuisine Meals which is not healthy but I hate to cook just for myself these days.

We call it tenderloin too! Have your cookbook and your cornbread is wonderful! Thanks for all of the videos. My mom freezes her leftover cornbread to make cornbread dressing, usually not much leftover. My dad and my husband love cornbread and milk.
None of my family were hunters. I've had venison many times, but it's always been in a restaurant setting. The entire meal looks delicious! I do make homemade cornbread, much the same as you. We always have leftovers, I reheat by toasting it in butter on my Lodge cast iron griddle that usually is sitting over two eyes of my gas stove.
Omg I can't wait for that first deer tenderloin of the year. I don't do bow so I have to wait till after Thanksgiving here iN Pennsylvania. But it's been on my mind and this video just made it worse lol. Beautiful plate of food. Thank you guys.

We had fresh field peas tonight right out of the garden. They were soooo good! And put 5 bags in the freezer. My peas & okree have done the best in my garden this year. I enjoyed the video tonight, especially seeing how Matt does deer meat. My son in law is a hunter so we do get to have deer meat when they share some with us. I really enjoy your channel and your family. Thanks for sharing them with us.

I wish I was there, love deer meat! I do soak mine with a little vinegar, soy sauce, bacon grease, about an hour before cooking the meat.
Each selection 🍽️ of delicious food here is pleasingly healthful ! The fork tenderizing does perfectly for me also.
I’ve said it before, it’s been years since I’ve had deer and elk growing up in Colorado. I wasn’t crazy about it. BUT the way Matt cleans and seasons the meat, it looks so tender and tasty.

Backstrap is wonderful!
Grew up on venison. Momma always used to marinate the backstrap in Italian dressing and it was SO GOOD!!!
Daniel Boone cornbread with Brer Rabbit molasses as second breakfast. Leftover cornbread makes fantastic dressing with roast chicken. Good eating! Matt and Tipper sharing their bountiful feast with us. Bless! 😋

Try cornbread for breakfast instead of cereal with milk and sweetener and a little maple syrup on top. Sometimes with a sprinkle of cinnamon or sometimes with a little nutmeg. Also good with cream or vanilla ice cream. Yes, vanilla ice cream for breakfast. Who'se looking but you.

When you were speaking of leftover cornbread, my dad use to crumble some up in a glass poured buttermilk over it, with some black pepper. He truly enjoyed it that way!

Freezes wonderfully! I have even froze it (usually leftovers) and used it at Thanksgiving for my dressing. Works.

Okree vs Okray. I had a great-aunt from Ashe County. I always knew her as Alfee. It wasn't till she died that I learned her name was actually Alpha. It's that beautiful Appalachian dialect: a final "A" (or just a shwa) turns to "EE". "Virginia" turns into "Virginiee", for instance. I love this channel so much!

Thanks Matt for teaching about the preparing and the cooking of the back strap / tenderloin. I remember my kin dressing out their hunt. they always said unless they were with the person on the hunt or felled it themselves that they would not eat someone else’s kill. Y’all starve me to death watching y’all cook those wonderful & healthy meals. Being a senior citizen & living alone now, I do fast food or Lean Cuisine Meals which is not healthy but I hate to cook just for myself these days.

Ain't it amazing that we blessed Appalachians eat better much of the time than the kings of old. I saw a herd of 17 deer yesterday near Skeenah Gap. I sat in my truck with my grandson daydreaming about supper. Y'all have a nice night.

We call it tenderloin too! Have your cookbook and your cornbread is wonderful! Thanks for all of the videos. My mom freezes her leftover cornbread to make cornbread dressing, usually not much leftover. My dad and my husband love cornbread and milk.
None of my family were hunters. I've had venison many times, but it's always been in a restaurant setting. The entire meal looks delicious!
I do make homemade cornbread, much the same as you. We always have leftovers, I reheat by toasting it in butter on my Lodge cast iron griddle that usually is sitting over two eyes of my gas stove.
I saw the comment about freezing cornbread. We’ve done that too and used it for dressing. I put it in freezer bags and it worked great.
