    I was carrying my case of pressure canned chicken to the basement to store. I missed the last step and went tumbling. I’m a little sore and bruised but I did not drop the chicken! Prepping priority!

      So glad you're not hurt! Our pantry is in the basement so I cart a lot of stuff up and down, and missing a step is a big fear. What a miracle you saved the chicken, too :-)

    I cooked and mashed squash (lg.orange crookneck) and dehydrated it in a thin layer. It made the best chips to replace store-bought chips.

      You can dry pumpkin like that for pies and whatever else you normally use pumpkin in too. Like your idea for chips!

    Be prepared, not scared! Buy more every pay day! Love this "Best case scenario, I was wrong & we have food for a while. Worst case scenario, I was right & we have food for a while!" I've prepped enough for 2 yr worth of food over the course of the last 4 years. I already had hurricane supplies from when I lived in Florida, moved back home to the mountain for safety about 3 years ago. I have heirloom vegetable seeds, a garden, canning supplies, Miracle Grow, a compost pile & Hydroponic set up for year round growing ($79.95 on Amazon) + vertical planters & grow lights. If the grid goes down, I have windows with great sun all day & can use reflective emergency blankets taped to cardboard to direct sun all day to my plants. Also, I have a small woodstove ($79.99. Amazon) for heat & cooking/ canning & a convection stove fan to push heat around & multiple lengths of copper tubing to wrap around chimney to heat multiple rooms & keep pipes from freezing ( measure the distances needed for tubing & 2 wraps around chimney). I've planted a medicinal garden & stored gallons of GF vodka so anyone will be able to use my tinctures. Or I can start drinking it when the world gets really stupid!!! Which I fear won't be long, 6 months to a year at best & others saying 15 days to 3 months. So who really knows? Just keep prepping!. God Bless us all! We'll need His Blessings & Mercy in the coming bad times. We're here, watching this channel because we want knowledge. With God's help, we'll all rally together & have the courage, strength & ability to overcome the evil being set upon us! Watch 'Turn' & how the colonists did it, we may be set back economically where we'll have to live like that! God Bless you all!

    My beyond the basics are designed to cheer me up. When we might actually be facing emergencies that require us to eat only the food we have stored, we will also be facing trials and disasters that can discourage and depress us. I need the extra. Jarred lemon curd. Olives to turn some bread into olive bread. Marinated artichoke hearts to perk up my palate. Thai peanut sauce to make Thai pizza. M&M's Butterscotch candies. Vacuum sealed chocolate chips. Just little extras to remind me life holds joy and the situation is not hopeless.
    I am currently experimenting with more ethnic recipes that I love to order in restaurants to see if I can develop some recipes that use shelf stable alternatives. Again, a way of reassuring myself life can include treats even in the worst of times.

    Well...I did it. I canned my first batch of peaches. This was my first canning experience, and thanks to you the process was great! The problem was that I didn't know anything about peaches. I didn't realize that the best canning varieties are ready in late spring...not late June. I went to the local grower and bought about 20 lbs of peaches. Off I went to can em up! Well, let me tell you that I learned (the hard way) that cling peaches are not good for canning...and I now know a new term....'mealing" (?)...That is when the peach is just destoyed on the inside by heat or other handling processes after harvest. THEY WERE GROSS! At first I thought I blanched them too long, then I tried not blanching at all...GRRROSSS! But I went ahead with the canning process. I got a great seal, and was happy to have crossed that bridge. Of course, two days later I threw all four quarts out. But hey...live and learn. Might be a while before I can eat peaches again...so I am off to BEANS! THANK YOU FOR BEING A WONDERFUL TEACHER! I will not give up...me n my Presto Pressure Canner. I did learn that it is better to have the Graniteware water bath canner, if you can. The Presto takes forever to reach boil for water bath. A thinner walled pan is definitely in my future. And...I ashamedly admit...I was born and have lived in GEORGIA for 64 yrs....not to know anything about peaches is down right embarrassing!

    Thank you SO MUCH, Pam, for sharing your wisdom. I have canned/frozen garden produce for years, but beyond that I’m in over my head. Today I purchased 6 Kwik Trip rotisserie chickens ($5 on Mondays!) shredded the meat and will be freeze drying them tomorrow. I threw all the bones and skins in a pot and made broth. Will be canning that tomorrow as well. I would FD it as well, but there is a back log of goodness in my freezer waiting to be FDed. You are an inspiration to many. Thank you from the bottom of my heart.

    I have watch all of your videos several times and love, love, love them all. I was born and raised in Utah as well and had food storage as a way of life. My parents had a 50 gallon drum of wheat stored in their basement. They must have built the house around it because when it became time to move my mother to an assisted living situation the wheat had to stay. There was no way to get the steel drum out of the basement. Plus the fact that when the drum was opened the wheat had started to foment. Store in smaller quantities. Lesson learned.
    My main purpose for writing today is to thank you for your use of the English language. So many of the videos I watch are so full of grammatical errors I have to stop watching. Even the supposedly educated journalists we watch apparently were absent the day grammar was taught. So thank you for bringing so much enjoyment into my everyday preparedness journey.

    Pam, we think alike! Those same ingredients have been my focus. I do not have a freeze dryer, so for the cheese I colored outside the lines...am trying waxing, and am experimenting (testing) some soft cheese canning. Being a retired home economist, I was disappointed when government pre-maturely stopped the funding for preservation testing of so many food products, effectively limiting progress of “rules” development for safe canning. I understand both sides of the safe canning debates, however, in these unprecedented times, I am so thankful that God gifted me an agriculture background, an education specializing in foods and common sense. Each of us must use the resources available to us as we figure out how to best help ourselves and our loved ones to sustain our health. Thank you for being an inspiration!

      @Terry Manning That is on my to try list! These list keep getting longer and this old body keeps getting slower lol. If you have had success, please share. Also, need to find an affordable and available quality whole milk powder. Have on hand the Hoosier Hill brand products. Possibly received an off batch of their whole milk, but am not thrilled with it, while their cream and buttermilk work well so far. Azure does not travel anywhere near my rural area. God bless.

    All very good ideas. Just an FYI, mirepoix is 2 parts onion, 1 part celery and 1 part carrot. Holy Trinity is a Cajun blend of equal parts onion, celery and bell pepper. 😊 A little different flavor profile.

    Nowadays you can subsist on basic staple foods if you are sprouting seeds and growing microgreens, too. As a young Army wife I focused on indoor vegetable gardening to help cover all the nutritional bases in an emergency, plus the usual stockpile of basi staples. My kitchen has scallions, herbs, and greens growing all year long. You cN sprout all manner of seeds like mung beans, alfalfa, broccoli, and more, even without any source of light, to increase the available nutrition. My stockpile contains bulk seeds like onion, celery, kale, spinach, collard, broccoli, mung beans, alfalfa, curly cress, and more. The seedlings can be grown into plants and allowed to bolt to get more seeds.

    Thank you for the reminder to store what you normally like to eat. Especially need larger quantities of some like the carrots, onions, celery, tomatoes, etc that we use in a lot of recipes. I really need to work on stocking those basics.

    I'm surprised that 1970s list omitted pemmican:
    "Since there is no "official" recipe for pemmican, the shelf life may vary depending on ingredients and storage conditions. At room temperature, pemmican can generally last from one to five years, but there are anecdotal stories of pemmican stored in cool cellars being safely consumed after a decade or more." (The Internet)
    BTW, most folks rate the taste of pemmican as terrible. It is, however, sufficient to sustain life almost by itself.
    ( I'd keep a stash of vitamin pills -- water -- and prunes. No reason to take chances.)
    The other classic -- smoked fish and meats -- should've been on the list. I think the list was authored by a Vegan, or Kansan farmer.

    We live in a fantastic time for food storage and preservation methods. I was always afraid to learn to can until recently. I waterbath canned my first jams this weekend. Have had the freeze dryer running with the pedal to the metal, so to speak; just finished a large batch of sour cream in the freeze dryer. My husband just ordered a vacuum chamber sealer to complement the freeze dryer. With the expense of the freeze dryer setup being what it is (we have the large model), I'm going to do everything possible to protect our FD stored food.

    A freeze dryer is not possible as I’m on a fixed income but I do have a dehydrator and appreciate all your dehydrating tips. I think I could dehydrate most of the things you mentioned and am just starting to get in to making the powders. Thanks 😊

    You teach me so much that I can't believe I have a tip for you. We saw this in a boy scout magazine. We buried three metal garbage cans and store potatoes in there. It's the whole root cellar type concept. We place the potatoes in cloth bags and lower them into the garbage cans. We have a piece of plywood over top to keep snow from getting on top of the cans and seep in when we open the cans in the winter. It works great. We keep our potatoes in there until just about the next potato season. It works for other veggies as well but potatoes are all that we've tried.

      How deep you have to put your "root cellar" trash can depends on where you live. In my zone 3, we dig down 8 feet to stop it from freezing. (In colder winters may have to go to 10' as we can get down to -45*F ON THE THERMOMETER, that's not a wind chill temp!!) It will be about 45-50*F year round at feet in zone 3 with insulation (-your zone temps at 8 feet down may vary, ask your local cooperative extension agent) use straw & insulation inside & out & on top of can to rim of hole, hole 4 feet wide than can, ladder to access, rim of hole built up to stop water intrusion & child's sandbox cover to keep rain & snow out. Have to remove veggies by June to ensure there's no rot - then preserve by other methods & get new straw for next batch of fall veggies.

    Your students are fortunate in that you're an excellent instructor. I particularly like your science-based and also not coming across as "do this 'cause the world is coming to an end" approach.
    Things that have nothing to do with the world coming to an end - such as long-term illness, job loss, COVID, a climactic incident - would result in folks being glad that they had food on hand.

    #1 must have for us is meat. Chicken, beef, pork, and fish, both home canned and store bought. Haven't done turkey yet. I really want ham but I still can't get ahold of it where I live. My husband made 4 different kinds of pork sausage (not cured) and I want to can some of that too. We are doing well with our other supplies but the meat is foremost because we honestly feel like it won't be long before we are priced out of buying meat.

      It seems that the powers that be want to push us to become vegan. More and more non-meat products are filling the shelves. There’s no way that Franken meat is safe or healthy!

      Meat for sure. I tried my hand at dehydrating chicken. It's really easy. I Instant Pot my chicken breasts then shred and dry. I like putting it in sushi rice with other dried vegetables.

      I make homemade breakfast and Italian sausage. I make them into pattys, links and ground. I then can it all. The Italian sausage to do several different ways other than just the meat in a jar method. Some with tomato sauce, chopped and diced tomatoes, some with peppers and onions to be used in tomato-less dishes. Breakfast sausage for us is in 2 flavors; herb (no sage) and maple. Either one in ground for is yummy in quick breakfast burritos :) Turkey is amazing when brined in a simple herb brine then baked. Remove from the bone, fill the jars and add water. Turkey doesn’t make a whole lot so we wait until they're. .49lb and get several lol. It's also super good traditional flavored too. 😋 Canning ham and stuff like smoked sausage (for us) we didn't care for at all because of texture and flavor changes. I have never tried fish... I'm afraid it will become mush.

    For those that cannot afford a dehydrator or freeze dryer a solar oven can also dehydrate. I have a 9 tray excalibur and medium freeze dryer but just purchased the All Season Solar Cooker for $100. As I live in the Vegas area where the sun is plentiful I’ll now be able to save my other fuels (propane, butane, wood pellets, liquid fuel and briquettes) to use sparingly as the "sun fuel" is free! There are videos showing how to dehydrate in solar ovens which makes it so versatile. As another additional spice to my supplies is dehydrating 14 sacks of spicy red New Mexico Hatch chile a definite must for my Mexican daily cooking. Thank you for making this very informative video.

      There are plans online for building a solar food dehydrator that can be made very inexpensively. I wonder if it is a well known piece of info.

      @@lyndabuchholz1216 probably not well known. I made a cardboard box oven about 4 years ago and made some nice beef ribs! There are many people new to prepping and are unaware of the diy stuff.

      @@lyndabuchholz1216 some of my family are finally realizing that there will be a food shortage and are beginning to build up their small supplies.
      I have so much info regarding different aspects of prepping that they have never had a desire to tap into.
      My cousin recently purchased a dehydrator and asked for help and I told her I may be vomiting info to her which she said “vomit away”, lol!
      When you can attach a link to info you may think others don’t know about just attach to your comment. We are all here to help each other and we are all at different levels of knowledge so any info you have would be appreciated by many too.

    No freeze dryer but becoming a better canner/dehydrator thanks to you! Much larger patio garden this year so I’ll certainly be busy. Plans in the back of my head for next year as well. The great news is that I’m so fully stocked right now that I can simply shop the loss leaders at my local grocery and spend maybe $5-10/wk. I’m set for at LEAST 6 months to which I’m truly grateful for right now.

    I'm all for storing food for when the shitaki hits the fan. I do it I can, I fd, and dehydrate. But nobody talks about how to protect it from the people who will come after it when they are starving and you have food. I don't know what I'll do. I'm 70 and I could not protect my stuff if someone wanted it bad enough. My sisters son in law says what you going to do live two weeks longer than the rest of us😢😢😢. I don't want to live Ike that. I've always been taught you have your food storage for hard times. I've learned alot from your channel. I have only a small home and not a lot of storage space, no garage no basement but I can shove alot in my closets and cupboards😅😅😅. I have chickens but one day I suspect they will be coming up missing one day. Thanks for what you do.

      I would like to know also. I tried dehydrating them several times and wasn't fond of how they rehydrate. Not well in my case. Broccoli florets were great but remove all the stems except the tiny ones.

      Not sure if you still need the info or not, but "Auguson Farms" sells the #10 cans of carrots fairly cheap. Amazon carries a lot of the Auguson Farms foods in #10 cans. Many times throughout the year, Amazon will throw various varieties on sale. That is when I usually pick them up. Hope this helps.

    If ghee is butter with the milk solids removed, could you add powdered milk to ghee to turn it back into butter?

      No reason to do that! Dr Pam has an excellent video on making ghee, and she says she eaten it as if it were butter. It is delicious! The key, which I learned from her, is to cook it until the milk solids caramelize on the bottom of the pan - it will look burnt, but stop before it is burnt black. Baking probably wouldn’t work well well with ghee. Baked goods with butter usually count on the water in the butter to steam up and rise. Especially things like pie crusts, scones, and laminated pastries. It might be ok for cake & cookie recipes that call for melted butter, but may change the texture somewhat.

    I couldn't live without cocoa powder and vanilla and spices & seasonings. Thank you for sharing your "must haves". Wish we could find another magic source of fats that lasts a long time. I have made Ghee and buy my olive and avocado oils in smaller bottles as I believe they store better when you have only a small amount exposed to oxygen once opened. And don't forget some good cookbooks. ;)

    Oh Rose Red, i love your chanels and your aproach to life. Last June i turned 80 years young. Unfortunately i have some medical issues that restrict my mobility but otherwise am relatively healthy. I am over 6 feet tall and have ALWAYS eaten without much concern. I currently weight more than pregnacy times, eek! 3 or 4 years ago, after learning more about the food we eat here in America. I replaced store bought white flour products, corn syrup, "chemical" ingredirnts, refined sugar, etc. With organic, whole food. I still use sweetner, but it is raw honey; snack on seed or veg ies with humas. Anyway, i lost unwanted pounds by doing pretty much what you are trying. These "golden years" can be quite a challenge.     We have used our freeze dryer mostly for broths, big bags of frozen vegetables when they go on sale, cooked chicken, and leftovers. It is just two of us but I continue to cook as though for a large family and freeze dry what we don't eat in a couple of days. We have lots of full meals ready to reconstitute when needed. Things I have not done are dairy and potatoes! So I need to grab these items when on sale and get some of those in storage! Thanks always, Pam and Jim, for giving us such great ideas that go beyond the basics!

    Got my taters in the bucket. Times are tough. We all need to do what we can to survive - strong and self sufficient. Growing our own food for the most part - occasionally shopping at the Dollar Tree or thrift stores (walking there instead of driving whenever possible). I try to support my local merchants, when I do have to spend money on something - avoiding those "delivered to your doorstep" companies like Amazon. Overall, I'm doing my part to avoid increasing the carbon footprint.

    Oh my! Do be careful! Former ER nurse here and I know “ that fall “ can change your life dear ones. I am in my seventies and go up and down those stairs to basement /garage level with my canned goods etc as well-not ideal. I came across a sturdy light plastic basket like the ones you see in the grocery store and use that to tote my jars and products. I can use one hand to carry the basket and one on the railing! Yes sometimes it is more than one trip but I call that my “exercise program” . Blessing over all my sister canners out there. Do be careful.

    I am so jealous what you can eat. I'm allergic to milk products and several grains including wheat as well as eggs. I don't eat sugar because of a health issue. So I have to get creative playing ahead. It's so doable.

    I did up a lot of ghee following your directions. I have also been canning a variety of meats I got on markdown. Veggie garden starting to give me a few cherry tomatoes and peppers, corn looking close to harvest. Hoping for a nice harvest of the beans, squash and melons. Just put away a nice bunch of garlic and garlic scape pesto from our harvest. I really enjoy your shows and have tried many of your canning and dehydrating ideas.

    We are so much better prepared now and with your help we've got better knowledge of what we can do. @wow how life goes on! that is a great expression of food. I remember leaving home and having my own place with my daughter, and only had corn flour and some milk and honey in the cupboard! Thankfully a friend introduced me to WIC and other things at that time.
