  • I'm a very white boi, but since I was a kid I've loved hispanic cultures - Mexican culture especially. I minored in Spanish in college, can only dance to flamenco style music, and am obsessed with foods from latin america, especially tacos.
Today I try to remake the best taco in the world, in my opinion - Perrones con todo from Tacos El Yaqui, Rosarito, Mexico. I used to live in San Diego, and these are the taste that I miss most from Mexicali. I have been working on triggering my tastebuds with their flavors from home for a while now, and this is by far the closest I have come or seen anyone come online. These were extraordinary, and I truly hope you take a Saturday or Sunday and make these happen for you and your family. You will not regret it! I have made and eaten hundreds and hundreds of tacos, and this is, without a doubt, the best homemade taco recipe I've ever had.
Within this recipe are a recipe for fresh tortillas, a recipe for fresh vegan tortillas, a recipe for fresh, simple guacamole, and a recipe for delicious carne asada. I put a lot of time, effort, thought, and love into this video and recipe, so I hope you enjoy it.

Not familiar with beer marinades but I'm curious to try it. The ones I grew up with back home had more of lemon or orange thing going on.
But you nailed it, man. Good stuff. I enjoyed the narration too LMAO

Outstanding Video! I live in Chula Vista (South San Diego) and have been going to Tacos El Yaqui for 18 years! We found them by a local furniture maker in Rosarito that took us. At that time they were mostly only known by locals. I consider myself a Baja Taco Junkie having eaten at 100+ taco stands/shops/restaurants all over Baja. These truly are one of my absolute favorites if not the best I have ever eaten. To be fair they are not your typical corn tortilla street taco found in most places in Baja or the States. They are a cross between a burrito and a high quality "steak" taco. Nonetheless, Yaqui will be the standard for all other taco's to be compared and measured. Thank you for your detailed recipe. I am going to give it go! I love your style! Let us know if you have any new adds and/or improvements since this video was posted. Thanks again!

Frank -Thank you so much for your thoughtful comment.
Definitely not a typical taco, and I agree with the quasi-burrito statement. Its funny because flour tortillas get a bad wrap w tacos in most cases, but Yaqui flips that on its head.
Happy to hear I am not the only person who still dreams of their adventures to this spot. Will definitely let you know! I still have to figure out their quesataco construction and also their spicy salsa. Hope to keep improving upon this one.
Let me know if you make it or have any other memories from the spot that might help this recipe move forward.
      Cheers man!

Nice video. I’m in agreement that tacos el Yaqui are game changing and still one of my favorite tacos. I think their marinade has some lime and maggie for flavor and to tenderize. Also they do one thing that I rarely see at taco shops. Once the meat comes off the grill the braise it for about 10 or so in a pot thats over heat to even make the meat super tender. They pull new taco meat from the pot and chop it with a cleaver. Good job on documenting the taco recipe

Larry Munroe best taqueria out there! Thanks for commenting amazing insights thank you especially for the braising bit! This is one of those recipes that will be a constant work in progress. I squeezed some lime over top when cooking, but will add to marinade next time. What is maggie?

Cody Tries Stuff it’s like the soy sauce and seen it used in Mexican, Asian and middle eastern foods. www.cooksinfo.com/maggi

@@larrymunroe7097 Great tip I saw a lot of carne asada recipes using soy but it didn't seem right to add. I will make sure to get some!

Cody, dump the peppercorns and use oregano, garlic and beer as your marinade. The organic flour tortillas (Tortilla Factory brand) are very excellent. Good luck.
