Keep the engine as close to stock as possible. The Evo lifter conversion sounds good. Just take your time, try to use quality parts, follow assembly specs and everything will be jake. A buddy of mine had his AMF era Shovel engine blueprinted and balanced -- not cheap, but the bike ran great and reliably for years. Build right. Ride safe.
Yep... That's gonna be some serious money spent to make it an evo style oiling system. But if you got the means, then go with it. Only things I can think of is lifters, pushrods, rockers to start. Looking forward to seeing how it goes.

Keep the shovel a shovel. If u want Evo reliability...buy an Evo. You don't ride a shovel because its reliable..you ride it for its iconic quirks. Just my 2 cents. Keep up the good content.
As an enthusiast i agree with you, as a mechanic I dont. Im so conflicted🤣
Just a food for thought. Amsoil Adam has an additional tire tent at bike weeks and as far as I know he is carrying quality stock and is less expensive than HD. You might want to check him out because I do not think he would have a problem shipping tires to you since you will not be attending any rallies and if it saves you a few dollars it can't hurt. Seems pretty good for a AMF 70's shovelhead.
Honestly im not sure if any of it is AMF. The heads are late 81, the cases are delkron, and im unsure of displacement. I was told its a 80ci. Currently its all at the machine shop so i cant measure anything.

You're young :-) so if you want to get money out also, keep as close to original as possible, and document it!
Its an aftermarket frame and aftermarket engine cases, so the value is already caput.
