I'm going to enjoy your journey. I'm Aussie born but my family are the Burghers of Ceylon and lived there 250 years. I met and married my first wife in Hikkaduwa and married her in Galle ... 10 years later took 2nd wife for honeymoon in Hikkaduwa ... love the place. I will return next June when it's cold winter in Adelaide ... HAVE A GREAT ROMANTIC ADVENTURE !!!

Just so you aware there are many variations of kothu, each have the option of adding cheese. You have rotti, dolphin, string hopper variation which can made in a few ways such as masala, palanji. You can add the meat you like as well but normally the roast chicken / beef or bbq / tandoori are common. Hope that helps a quick crash course into selecting a kothu. However little eateries may not have all these variations.

@@TheHolisticTrainer I do have a travel list on places I want to visit still and it is on there but it's way down the list. I love traveling also I've been to 40 States in the US and 36 outside of the country so far but I always go back to certain places because I haven't seen everything I wanted to see there. I tried to plan the best I can to see as much in the country while I'm there but you also want to enjoy yourself.

The man with a wooden gadget and a sharp knife on his back (in the Kottu food corner) was a TODDY TAPPER. They use that sharp knife to trim coconut flowers in a particular way so that the flower oozes a sugary liquid. That gets fermented in a container attached to the flower and yields the local liquor TODDY.
