- DISCLAIMER: Normally, you would not put turmeric into a butter paneer masala, because it is too bitter. We, however, like the slightly tangy flavour it has if added in small quantity. We have no access to cashew butter so cream will do. Also, don't hold back with the butter in the end, it needs a very generous spoonfull for that rich taste ;)

PANEER CHEESE:
1l Full fat Milk
4 tbsp Vinegar
bring milk to a simmer, then add vinegar. Let milk curdle and cool down a bit before straining through a cheese cloth. Let sit for at least 8 hours, ideally over night.
CURRY:
2 green cardamoms
3 cloves
1 tsp anise seeds
1 bay leaf
1 tbsp garam masala
1 tsp coriander powder
1 tsp paprika powder
1 tsp cinnamon
1 tsp turmeric (OPTIONAL)

onion
ginger
2 packs tomato sauce
full fat cream OR 2 tbsp of cashew butter
butter
Toast the whole spices in a tablespoon of oil over low heat. Then add minced ginger and garlic, cook until soft. Add onion and cook until translucent. Dice paneer and let it sit in some yoghurt. Add tomato sauce, and ground spices. Let it reduce down. Then add full fat cream and butter (as much as you like). Add paneer cheese. Enjoy :)
I can only give rough estimates since I add spices by feel. If necessary, add some more garam masala for stronger flavour. The whole recipe can be veganised by using coconut cream instead of dairy cream and let tofu sit in soy yoghurt over night.
