I feel like overall Shang Tsung is the most broken character in the series due to the fact that he can copy any opponents sprites and moves. This probably means Shang Tsung has code that allows the game to access opponents scripting and sprite-set for him. This is very dangerous and hard to do without anything going wrong somewhere along the way.
I work with sprites and scripting as well in my spare time. I think you're definitely right about the programmers not creating new code for Tsung to use for copying move sets and sprites. Too much memory usage and way too much work. Yes, I also believe the problem occurs when Tsung changes back. Also, I wonder this was done on emulator so, if these tricks are frame perfect maybe MCMXLVIIIAlt isn't giving the game the frames it needs to fully change Tsung's state.

when i had the game on genesis, i was able to corrupt towers, meeting infinite fights, i could do shao kan at the first fight. All i remember i needed 2 controllers.

Anyone else feel like MK3 did a horrible job with animalities? Considering they were possibly the most hyped out of all the eventually-debunked MKII rumors, it sucks that they had this many hangups: 1. Horrible monochrome color palettes. 2. Resolution that's noticeably worse than the rest of the game. Literally, calling them 16-bit might be too generous. 3. Piss-poor, stiff animation compared to how much more smoothly everything else in the game was animated. 4. If you wanted to do one and were close to closing your opponent out in round 2, you had to intentionally lose a round to do it. 5. Having to do a mercy and risk losing your quarter in case they caught lightning in a bottle and beat you. 6. The almost entirely horrible and needlessly goofy ones for the UMK3 characters. 7. Jax and Kung Lao both being large cats (lion and leopard) with identical attacks. 8. The weirdly disproportionate sizes of the animals in relation to their actual real world sizes. Rain was an elephant the size of a dog, Shang Tsung was a snake the size of a car, etc. 9. Small, but relevant, qualm here but how did they not have the foresight to save the scorpion animality for Scorpion and instead gave it to Sheeva.
This looks like a hacked rom if it this is actually the Genesis/Mega Drive port.The character select screen's color distribution is a dead giveaway and the stages look way better than the original Genesis/Mega Drive port.

There is one thing in particular that wrecks havoc is interrupting his Tripple fireball then allowing him to transform

From what others said, it is because Kano is the first character coded in the game, so it's used as a fallback character when crazy stuff happens.
