A Fuyu variety that is astringent? My Fuyu tree has been in the ground for over ten years and it only fruited once, other times just sat there with luscious leafy growth. I wonder the pruning to arm’s reach impedes its ability to produce fruits? Or weather related?
Persimmon are tip bearing, so any heading back of the branches will remove next year's flower buds. Persimmons can take a long time to establish and bear fruit, usually 5-7 years, but maybe longer. Topping the tree will impact the root system of the plant and may affect it's willingness to flower.
I’m not sure of your elevation, or microclimate. But I was just up the ladder today, picking loads, from the neighbours tree. In Vancouver BC. We had three nights of frost, and they are still firm, and delicious.
I hear those Jays in the background ---they waited until my persimmons were "right," and then they took every last one in one day. I'm going to quit feeding them cause they won't share.

Do you know what might be making all my green persimmon fruit drop off in the summer?
Probably water stress, either too much water or too little. Persimmons are surprisingly water hungry, but also kind of fussy.
