Hi, I am located in the south of Spain. High temperatures was a great issue they year. I tried out 'Pocket Oyster', and they adapted very well. Nice shelf live and firm and tasty. Normally the temperature range normally given, makes it more a cold wetter strain but if you look out for more information, its grown in China at high temperatures too.May be, you want give it a try. Thank you so much for all I am learning from your experiences.

I also dislike growing king oyster. While its a good mushroom when grown right, i can grow mossy creek mushrooms pathfinder oyster that tastes similar but better in my opinion and is much more tolerant of temperature ranges. It really dislikes contamination when fruiting, but thats not really an issue

Personally i dislike gold oyster because of the fagility of the caps, and the taste is kinda meh for my taste compared to other species. I grew it for one summer and it defintely sold decently at farmers markets, but i prefer that role to be pink oyster
