    Ingredients 📖
    2 cucumbers, remove the seeds and cut into strips
    1 carrot, peeled and cut into strips
    500 ml water
    1/2 cup raw sugar
    2 teaspoons salt (1/2 for salting and 1/2 for pickle)
    2 tablespoon white vinegar
    I reusable glass jar
    Instructions
    1.) Prepare the Vegetables: Wash the cucumbers and carrot thoroughly. Remove the seeds from the cucumbers and cut them into strips. Peel the carrot and cut it into strips as well. Place the prepared vegetables into a clean, dry glass jar.
    2.) Salt the vegetables: Sprinkle chopped vegetables with about a teaspoon of salt in a mixing bowl and set aside for 10 minutes. Salt reduces the water content from the vegetables and makes the pickle crispier. Wash the vegetables under running water and strain them. Dry them using the kitchen towel. Set aside.
    3.) Make the Pickles: Boil water, raw sugar, salt, and vinegar in a pot until sugar dissolves. Turn on stove and bring it to a gentle boil, and add all the vegetables into the pot. Bring the solution to a gentle boil, then remove it from the heat and let it cool slightly.
    4.) Sterilize the Glass Jar: Before pouring the pickles, sterilize the reusable glass jar by boiling it in water. Fill a large pot with enough water to fully submerge the glass jar. Place the jar in the pot, making sure it's upright and not touching the bottom or sides of the pot. Bring the water to a boil and let the jar boil for 10-15 minutes. Use tongs to carefully remove the jar from the boiling water and let it cool slightly before filling it with the pickles.
    5.) Pour the Pickles: Transfer the pickle to sterilised glass jar. You should be able to fill 1 jar. Let the pickle cool slightly before storing it in the fridge.
    6.) Seal and Refrigerate: Once the pickles has cooled, securely seal the glass jar with its lid. Place the jar in the refrigerator and allow the vegetables to marinate and pickle for at least 4 hours, or ideally overnight for the best flavor.
    7.) Serve and Enjoy: After the vegetables have marinated to your liking, remove the jar from the refrigerator. Use a pair of tongs or a slotted spoon to transfer the pickled vegetables to a serving dish, draining off any excess liquid. Serve the acar as a refreshing side dish or condiment alongside your favorite main dishes.
    8.) Store: Store any leftover acar in the sealed glass jar in the refrigerator for up to one week. The longer it sits, the more the flavors will meld together, making it even more delicious with time.

    Sounds delicious Hankerie.... Can I use maple syrup instead of sugar?

      Absolutely can. To replace raw/ white sugar with maple syrup in general cooking, it is ideal to use ¾ cup of maple syrup for every one cup of sugar. This recipe asking for 1/2 cup of raw sugar means 0.375cup or 6TBSP of maple 🍁 syrup. Obviously you can adjust the level of sweetness accordingly !
