Since everyone's suggesting a challenge, how about this: Any clan or difficulty you want, but every playable faction cannot be wiped out, you have to make them a vassal. If they're eliminated, you have liberate them and declare them a vassal.

I don't think they can declare war, but other clans tend to declare war on them. When Realm divide hits and they rebel? Well you'll have to beat them again. After Realm divide or becoming Shogun (Not too sure when), the RD penalty doesn't appear for your new vassals.
Not to mention it's sort-of-historical too, Tokugawa became vassal of Oda after Imagawa's defeat until the end of Sengoku. Hattori is sort-of vassal to Tokugawa (Ieyasu specifically). number of clans that Nobunaga completely wiped off the map isn't that many. Evident by how Shimazu, Date and Mori are still around in Fall of the Samurai. (Shimazu and Date are still around even in present day!)

No Ashigaru (except matchlocks and firebombs), no bow warrior monks, no yari cav, no katana samurai. oooor maybe a campaign where he has to take all the trade nodes and do all invasions per navy- and he cannot auto resolve navy battles, so he finally gets good at them ^^
I'll never get good at naval battles, because they are incredibly buggy and just plain shit. Literally every time I do a naval battle at least 1 or 2 bugs happen. Ships sailing into the wall, or ships constantly sailing in circles trying to get to where I told them, ships not firing even though they're clearly in range, etc, etc, etc. Take your pick.
Speaking of naval battle bug; there's one time where my Bow Kobaya get hooked by Sengoku Bune when I tried a fire arrow strafe, the rest of my fleet blasted it with shower of fire arrow that depleted its morale just as it's begin boarding operation. But it didn't retract tow cable and run. The boarding bar showed up but it never change after minutes. I zoomed in and found that Samurais in Sengoku Bune somehow clipped in its hull and cannot move out and cannot be shot at by other Bow Kobaya as they're still inside the ship. Meanwhile Ashigarus on Bow Kobaya keep taunting the Samurais to come out. But they never come out until the time run out. That's some Shameful Display material there. No wonder they lost to Admiral Yi despite having 300 ships barreling down against Yi's 13 ships.
Spears/naginata only with any clan. Monks allowed but yari ashigaru limited to 6 units per full stack. Should be fun considering your dislike of yari samurai.
The thing that irked me with Shogun 2 is that the AI is for some reason a lot better on Normal than it is on Legendary, but it doesn't get constant streams of free stacks. When the increased difficulty levels mean worse AI that outright cheats that's hardly a good game design.
And as for the Adpocalypse, RUclips goes on rage mode with a friend of mine because he puts Israel in the title of a video. All it is is a compilation of top Israel gamers' best moments, but RUclips sees anything associated with the Middle East and it must go crazy
Couple benefits, if you have 2 generals, you get the full 10 experience on the attacking general as well as an extra 3 experience on the reinforcing general who otherwise gets only 1. Honestly that's a minor benefit though, the main reason I do it is because it saves a ton of movement on the reinforcing units. In that first battle if I had attacked with the entire army I would've been stuck in the forest for an extra turn because it uses up all the movement on regular units who have far less movement than generals. Now instead I was able to move my entire army back into town (minus the main general, but he catches up on the next turn).

On easier difficulties of you are the hojo and ally to takeda and imagawa they win the campaign for you then you kill them all after you take the east I've done it before it's funny how all their armies have to turn around and fight me even though I have more men

Challenge run idea. You can't build our upgrade buildings. To get new buildings, you need to take over cities that have those buildings
