    Corn Smut (Huitlacoche)... creepy, scary? BURN IT!? Growing corn can be an adventure! Consider this for Taco Tuesday. Cheers!
    Our corn harvest this year was not impressive, but as we were pulling up all of the stalks to put into compost, we noticed something strange looking was on some of the corn.
    There were large galls on some of the ears that looked like one of the strangest infections we had ever seen. I remembered seeing something like this on my grandmother’s corn when I was growing up, but neither of us knew exactly what this was, until we researched it.
    We discovered that what we had growing on our corn was huitlacoche, also known in the U.S. as corn smut or corn truffles.
    Huitlacoche is an edible fungus that sometimes appears on corn when silks go unpollinated or after a long period of rain or after wind damage opens up wounds on the corn as it develops.
    This year, we had two separate occasions where the wind was so strong it flattened our corn, so we think this is the reason why some of our ears developed huitlacoche.
    After finding the huitlacoche and researching the fungus further, we discovered that, not only is it edible, but it is actually healthier than a typical kernel of corn. In fact, in some cultures, like Mexico, it is considered a delicacy, even though it is uncommon in the U.S. because sweet corn farmers spray their crops with fungicide to prevent this fungus from creating product loss for them.
    We then knew we had to try the huitlacoche to see exactly why the edible fungus is enjoyed by some as a delicacy, and we have to say, it was delicious! The taste is both smokey and a bit sweet, but not overpowering. We cooked the huitlacoche with onions, peppers, and tomatoes (all from the garden) and served it as a taco. Needless to say, in the future, we will not waste any huitlacoche that forms on our organic ears of corn.

      @@yahiawaleed828 I am sorry, I just saw this comment, or I would have replied sooner. Huitlacoche doesn't preserve well for long, but we did another video on this topic, and one of the things we suggest is that you can refrigerate it for a short period of time.

    In México the huitlacoche from 5 to 10 times more expensive than normal corn, so many farmers put efforts on infecting their crops in purpose.

      Can someone preserve it themselves by home canning??

    Back when I used to live in Mexico, I was privileged to eat fresh huitlacoche. As my grandma had a cornfield. Now in the US, I couldn’t find it. Until recently I found it in a little grocery store, packed in a jar. Got myself a jar on heartbeat, to make huitlacoche quesadillas! I can’t believe after 22 years later, I tasted huitlacoche again. 🥺

      Thank you, you as well have an awesome week! If you haven’t tried ‘flor de calabaza’ I recommend it! I also found it packed in a jar, in the same little hispanic grocery store I found the huitlacoche in. I also prepare the flor de calabaza as a filling for a quesadilla. I sauté it with a bit oil, serrano pepper, Mexican squash and epazote. As for the huitlacoche, add fresh corn kernels, instead of the squash. I personally make the tortillas from scratch, with the masa dough. And it’s the bomb!

      @@BrandiWL Although fresh is better, I prefer the jar version for convenience. As I can stock up a few jars for the future, and also because I can only get it where am I in a jar.

    I grew corn in my backyard and while I was admiring my corn I saw it had grown to something mutation-like. I called my dad and he was so EXCITED! We’re planning on cooking it tonight or tomorrow; didn’t know it was edible 😅

    I'm from Mexico city and indeed this is quite common among natives, I'm mixed race so of course I keep my native original peoples side up high. Super proud about it. I'm glad you got to try this amazingness. It's so blatantly absurd that not only after 500 years after, settlers realize the goodness of our vegetation and the species of this earth! anyways, enjoy!

    Huitlacoche taste better when adding greens and herbs like epazote, peppermint, cilantro or any herb that goes well with hearty smoky mushroom flavors

    Tried it for my 30th birthday this past Friday and they described it as, "Mexican Truffle." After tasting it and researching it further, I can definitely agree that it is the Mexican Truffle.

      I know! I will say this. We love sweet corn, but we also love the taste of the huitlacoche. I hope we get more of both next season. :)

    This is one of my favorite foods to eat when I go to my home town in Sultepec, mx. All the open markets or Tianguis will have vendors selling these as quesadillas or gorditas. The preparation in the video is correct. You can even use it to stuff chicken breasts with cheese. Epazote herb is the key to enhancing the flavor. The real food of Mexico are nothing you would find here in the states. They also do sell the huitlacoches in can at your local Hispanic market, just make sure you drain them well to avoid too much moisture in your saute as you cook them. Enjoy

      Fungi consume material to use for reproduction. In that one stage before the spores pop out, the fungi’s work is accumulated and concentrated in nutrients. Makes me wonder if corn wasn’t domesticated as much for the smuts as the raw corn.

      Well, fungi are more closely related to animals than to plants, so that could be part of the reason.

    I'm going to try to grow some this year. I have a massive garden and grow corn moat years but I've never gotten any corn shut on them. Last Yeats, my sister had a few ears get infected, and she was kind enough to save them for me and let me collect all the spores. I have 2 dozen corn stalks growing right now and I'll be innoculating them as soon as the ears start to form!

    So that’s what I ate yesterday! 😂 I had a huitlacoche taco at a local taqueria (US). The menu description listed corn truffle, roasted, mixed mushrooms, fresh corn, and queso chihuahua. I love mushrooms and truffle-infused things, so I thought I’d give it a try. I had no idea that the corn truffle is the huitlacoche itself and that huitlacoche is a fungus lol. I was surprised by how smokey the flavor was. I’d thought the restaurant must have added their own smoke flavoring, like how it’s done in BBQ sometimes. But it was so good! Highly recommend on a soft corn tortilla. 😋 Thanks for the garden-to-table education!

    You can use it to make a guisado of mushrooms, corn and huitlacoche. So good! I also love them in tamales and quesadillas.

    I've never heard of it but saw it on a foraging web ad and decided to utube it, I think I found some in The Bronx after asking a Mexican restaurant owner, they call it Mexican Truffles! nice.

    That looks so good! We just harvested several ears of huitlachoche from our corn field! I am so excited to try this and I really appreciate your willingness to be a guinea pig and document it for us.... I was super hesitant because of the way it looks but I have heard that it is delicious....Seeing you try it gives me courage....Getting my very discriminating husband (fondly nicknamed "Mr. Picky Pants") to try it will be the next challenge!

      ​@@GutenGardening Oh my! Thank you again! I just cooked up some tacos filling like you did except I included some fresh sweet corn kernels in the mix...it turned out phenomenal. The taste is very mild but ramps up the surrounding flavors....I loved it and Mr Picky Pants even tried it and liked it which surprised the dickens out of me.... We have a bunch in the corn this year due to so much rain....I went out and got a five gallon bucket full - all I could find.

      How interesting! I did not know that at all. I do know that, growing up, I had no idea this was edible, but I frequently saw it in my grandmother's garden. I wish that I knew then what I know now about it.     I just found your channel, because I was wondering what this tasted like. (I saw an advertisement while I was watching another channel, it was for a book but it mentioned this and I needed to learn more about it! So, I looked it up, after doing a little research, none of which mentioned what it tasted like, but one thing I read did mention about "how-to" purposely make them, like you mentioned here about purposely exposing to the spores. But, I needed to findout what it tasted like, so I prematurely left the video I was watching.. just to Watch.. YOUR video!

    Honestly Is Delicious !.... In a Hot Pan place butter with your fav seasoning, Add Huitlacoche, cook for 30 secs, and you are Ready for a Delicious Taco. You can try a raw kernel of huitlacoche, and see how sweet It IS. plus nutricios !

    I grew up in rural Minnesota and saw this fungus in several fields that we worked. Did not know that it was an edible substance.

    I recall eating enchiladas with huitlacoche in a very nice restaurant in Oaxaca. I consider myself quite a “foodie” (😅) and asked the chef just what it was, as I could not identify it by flavor. I was so surprised to discover it was “corn smut” when she brought out a couple of ears to show me. I grew up in the South and thought such infected ears were ruined. The cuisine of Mexico is one of the most evolved in the world and constantly provides surprising fare that is both nutritious and delicious.

    Thank you for doing this video! I'm interested to know more about your research as I'm experimenting to try to grow some. Not everyone can go to Mexico to get fresh huitlaxoche and I've been told by those who know that the jarred is just not the same. Hoping I can make something happen to have that little Mexico experience once before I die. I do the best I can with what I've got! I am trying to grow some corn but gardening has never been my thing and wondering if this can happen with the fruit that falls off the plant as well.

      Thank you for watching Brandi! We discovered the huitlacoche on our corn after having only heard about it. In previous years, we did not see it on our corn, and I think a big reason we had it this time was the stress caused to our corn by some pretty major storms. That likely opened the ears up to the fungus. In terms of where you might find it, I am not sure I have heard of it occuring on anything that falls off of the plant, but that is a possibility. I have read that some individuals do place the spores for it directly on the ears in order to infect the corn to make it produce the huitlacoche, but I am not 100% sure how one goes about obtaining those spores. I will tell you, though, the taste is definitely worth the experience. I absolutely love it. :)

    I grew close to Mexico city, back in elementary school we used to be taught about huitlacoche, supposedly the word huitlacoche roughly translated to "the excrement of the gods" and used to be a food that only the aztec emperors were allowed to eat
    I love to eat it on quesadillas and was one of my favorite quesadilla fillings 😋

    It has a couple of other spellings: cuitlacoche, quitlacoche but it's the same thing. I like to eat it in an omelet. Just add a tablespoonful in a bowel and whip it with an egg. The cuitlacoche seem to go to the inside of the omelet and stays moist and delicious. I buy it canned in Mexican markets.

    Npr says complete protein when combining normal corn with this moldy corn.
    However there was an article posted years ago indicating a risk regarding eating moldy corn too often - especially for pregnant women.
    Some areas may hate this corn mold. Those who like & want to farm the corn mold probably need to stay far away from areas where they hate corn mold.
    Is a hundred miles far enough away?
    Reminds me of tempeh.

      Interesting! I hadn't thought of the tempeh comparison at all, but I can see what you mean. I have read some of the literature in terms of risks, etc. I don't know that I would eat this too often, and we don't eat any of the huitlacoche that has burst open.
      In the US, most farmers spray to keep corn smut from occuring. I have not found a distance necessary to prevent spread.

    I am a little bit more adventurous then some people when it come to food. I would try this if it was on a menu at a authentic Mexican restaurant. I am going to look for at least canned Huitlacoche in a grocery store that has more ethnic foods.

      True but just tell people you had a tostada instead of a tortilla. It's basically just a bent tostada. Quality depends on the brand.

      Great question. The corn gets infected with the fungal growth, and that can be done intentionally, but usually happens when the ears are open during the growing process, experience a long period of dry weather followed by a large a mount of rain, or go through trauma, like being blown down by the wind, etc. I hope that answers your question fully. :)

      No, it doesn't smell moldy so much as it has a nice earthy smell. I promise you it tastes so much better than it looks. Those tacos I made with it were fantastic. But, definitely harvest it before it splits open. :) Thank you for watching!
