Welcome back to Taco Tuesday Episode 10 - FULL RECIPE BELOW!
Corn smut, Mexican truffle, Huitlacoche, or alien looking stuff on my corn. Whatever you call it, Huitlacoche is a plant disease that causes smut on corn. It generally occurs after a rainstorm when the corn is ripening. In the US, it can be pretty rare to find due to the spraying of fungicide, however, in Mexico, it is seen as a delicacy that can be served in all sorts of savory dishes.

Nice video! But just so you know, fungicides actually don't work for corn smut. The biggest reasons you don't see corn smut in the US are because we use mostly resistant varieties of corn and utilize crop rotation.
Stop pretending like you know what you're talking about. That shit is goofy.
Hello, thank you for letting people know about one of the most loved delicacies in Mexico. But you you are missing one ingredient that is essential for huitlacoche, epazote which is an aromatic herb used is most Mexican dishes and huitlacoche tastes better with serrano peppers or jalapeno pepper
Efren Ceron agree ... epazote is the magic ingredient
and actual corn, in my humble opinion!
It's good stuff but hard to find in the US. Penzies has it.
Where can I get some epazote? I’ve never seen it or heard of it.
@@raquelgomez4382you don't come off as very humble , honestly.
Was really surprised when I scrolled down and saw the viewcount and channel size, your quality and content are both really good.
Look forward to coming back in a month or two to see by how many multiples the channel has grown.
I really appreciate it! Hoping the growth will come with time!
Your prediction was spot on!
He called it
Take a shot every time Ethan says 'Huetlacoche'
that's suicidal
Take a shot every time he says “I’m comin’ in with”.
Or earthy
Nah.
Oh wow! I'm mexican and I just learned a lot from your video. I'm impressed on the quality of your video, your information and just how good of a taco-eater you are. You just got yourself a new subscriber :)
We just tried this, yummy! Thanks for sharing.
Thank you, learned something new! Really enjoy your channel. Take care
I had soda de huitlacoche years ago in Mexico City. Fantastico!!!!
Everything about this video was on point shout to his openmindedness
Awesome video!
Yeah, canned Huitlacoches are good if that's all you have but fresh is better to cook up, never tried huitlacoches this way in taco form, my mom would serve us some fried rice with an equal amount of huitlacoches, some guacamole as a side dish and maybe some totopos(corn chips). But never tried it with poblano pepper slices and sliced onion, mom would cook it with a small/medium tomatoe and small/medium onion chop both up and if you have epazote(wild herb that is now cultivated for sale), the epazote gives it a certain, distinct flavor, some people say it tastes like kerosene, lol but its added as a digestive aid, so the eater won't feel bloated.Thumbs up Ethan, thanks for sharing and greetings from Mexico! :)
Love the cat chilling like nothing going on 🤣😂😂
Just found this on one ear of Golden Bantam sweet corn. I’ve heard about huitlacoche but didn’t know how it is prepared. I’m going to try it.
Bout to eat some huitlacoche. thanks for the info!
I ate this in Salida California once it was amazing
I love watching gringos eating huitlacoche. It's so good I wish the whole world knew about it.
I love quesadillas made with this! Topped with Mexican cream and salsa delish!
This is great! yeah please try adding some epazote, it’s a game changer
Harvested my first bit the other day. Was not disappointed. Unfortunately really hard to find in the north east US, even in gardens. 7 hours managed a 9.4oz yield, but it made for a delicious quesadilla
Once you have it , I believe you can use the infected corn to infect more uninfected corn. Not sure exactly how to use the spores but I'm sure you can find some info online. Im planing on trying it myself at some point.
Looks good...any idea where can I buy fresh Huitlacoche in LA?
I ate it in cdmx, loved it , specially in a quesadilla
amazing job!
I love mushrooms. Will have to give it a try if I get the opportunity
I don't know how to feel about this ingredient but me being me I would probably try it 😂The name is fun to say too
It looks really odd, but you gotta try everything once right?!
Do you eat any mushrooms? If so you're also eating a fungus lol.
🤣😳
wHeet la ko che
So, what do you all think, if given the chance would you give huitlacoche a try or does the look of it creep you out (it honestly looks really weird)?
Sure, would try it.
I’d try it! 👍🏻
abc123doreime That’s what I like to hear!
Asylum Jk Gotta try everything at least once right?
weet la ko che ('h' is silent) . Super tasty food, well done.
6:50 RIP whoever actually made a taco out of the fungus growing on the end of their corn
Such an interesting fungus...looks kinda neat and squishy...haha...I would love to try it, fresh- I've seen it out of a can
..yeah...nope
Ethan- you have s great voice too
So where did you find fresh corn smut?
I usually manage to find some every year. Chop it in eggs for breakfast.
Theres a huitlacochce taco truck by my house. I live in LA
Every time I hear corn... I hear hub...
Love this! Where were you able to source that huitlacoche?! You have also perfected your taco bite, you minimized juice on the face and spillage, nice work!
A friend of ours got some corn from a community garden with corn smut and gave us a couple of ears to try out! Haha, I've had several episodes of practice now :)
I made a vegetable glaze out of it. So good...
Funny how there's such a large disparity in views between videos also btw the h is not pronounced in Spanish
"Some call it smut"
Does it taste like mushroom?
Can you eat it raw and what does it taste like raw?
That is pretty interesting, E. For some reason I always thought blue corn was made with huitlacoche, but that information may be from 40 years ago. You are kinda like the Adam Ragusea of tacos (and that is a compliment). Not only will I try it, but I will try to seek it out. Thanks for telling me something I did not know!
I'm actually not sure what strain of corn they use for blue corn! I learned a lot about huitlacoche making this one, I never realized how interesting it is. Glad you enjoyed!
I planted corn this year, and it has this growing on it. Never seen anything like it before. I was very surprised to find out that people actually eat this stuff. It looks so gross.
Minute 1:55 that huitlacoche is a little "pasado" or too mature.
I JUST had some...its good. Kinda like mushrooms😊
Agreed! We accidentally grew it in our urban backyard garden. Cheers!
@@GutenGardening pretty cool
i wonder who the first person to try this was and why.
Fungicide has no effect on corn smut.
When your food goes mouldy but you eat it anyway. "it's a delicacy".
It’s not moldy…
Omg 😍
ghost pepper on your fingers?
I can most definitely do the fresh kind but that canned huitlacoche is a NO!!!
Tasty. Maize cordyceps
Side note to all men, do not use restroom after handling ghost pepper.
😳😳 woooaaaa. I mean I'd try it!! The raw ingredient is eye opening but no different than seeing squid ink used for pasta for the first time lol 🤷🏾♀️
¿Y el epazote?
Does it digest the same as corn? Haha
No it doesn't show up in your poop. The fungus breaks down that hard outer shell.
Amazing. However a big pass from me due to the fact that it looks like an inflated ticks
i m open for rly everything in the kitchen, but just looking at how this looks before the cleaning, makes me sick to the stomach....
Isnt this the way the cordyceps outbreak started?
Nah it started with ants
wow.... "disease"? a little respect no?
NO no no no no no no
Ok , but where in the hell did you get it? A truly ass move to not say where you got it 😂 cmon , buddy do better. Awesome video otherwise.
Absolutely gross-looking stuff, I don't think I would eat it!!
Manny Perez I’m sure a lot of people thought the same about chicken when they saw it for the first time too!
I like my corn yellow and fungus free. Wouldn't try it. Also dont like mushrooms. Another fungus.
