I don’t know, I think I’m increasing every row if I do what you are suggesting. 2 single crochet in every stitch, and that every row? Is that correct. I would think that in the next row I have to decrease. Crochet 2 together or something like that. To prevent crocheting a triangle.

I thought that too, but remember that you are skipping 2 stitches, so you need that 2nd stitch to maintain stitch count. The 3 on the top tip of the chevron only account for 1 of the skipped stitches on either side of it, but at the end of the row, you need that extra stitch or you end up decreasing.
