Oh you're Scottish? Same here!!! Do you normally have any chocolate alternatives? Anything chocolate-like should do, or even more black icing itself. I know that you can get quite hard fondant icing that could easily replace it. Icing is also meltable is some instances! :)
Also, if you dont have marshmellow fluff, just put ALOT of marshmellows in the microwave to melt it down, youll end up with the exactly same thing just dont let it get too soft and thin. Make sure its thick so keep stirring it!

It is a good rule of thumb for baking to use unsalted butter. I usually use salted butter and omit the salt asked for in the recipe.
The baking soda/vinegar is supposed to make them fluffier. I find whoopie pies to be halfway between cake and cookie and they are a little dense.
I think it's sweet that you're letting people do your theme for you!

a good tip to make your batter look more red without using a lot of food coloring, all you need to do is add a bit of cocoa powder. hope it helps :)
